.%20So%20I%20opened%20a%20muffin%20cookbook%20and%20let%20her%20choose%20a%20recipe.%20And%20no%20these%20are%20not%20savory%20or%20remotely%20healthy,%20but%20we%20made%20them%20back%20in%20July,%20long%20before%20school%20started!%20She%20actually%20went%20around%20our%20lane,%20distributing%20them%20to%20neighbors.%3C/p%3E%3Cp%3EReading%20the%20recipe%20before%20beginning%20(and%20scratching%20an%20itch%20lol)%E2%80%A6%3C/p%3E%3Cp%3EMeasuring%20the%20milk.%20Thank%20you,%20OXO,%20for%20inventing%20those%20slanted%20measuring%20cups%E2%80%93SO%20much%20easier%20for%20small%20kids!%3C/p%3E%3Cp%3EThis%20picture%20is%20blurry%20but%20it%20cracks%20me%20up.%20Of%20course%20when%20we%20designed%20the%20kitchen%20I%20was%20not%20thinking%20about%20whether%20my%20kids%20would%20be%20able%20to%20reach%20the%20microwave,%20arguably%20the%20safest%20cooking%20appliance%20in%20the%20kitchen.%20And%20yes%20she%20is%20on%20a%20stool.%3C/p%3E%3Cp%3EHere%20it%20is,%20the%20big%20spill.%20You%20knew%20one%20was%20coming!%20This%20time%20it%20was%20a%20lot%20of%20flour%20on%20the%20floor.%20And%20with%20this%20picture,%20we%20have%20proof%20that%20Alex%20cleaned%20it%20up%E2%80%A6.%3C/p%3E%3Cp%3E%E2%80%A6just%20not%20completely%20on%20her%20own!%20Delilah%20graciously%20immediately%20helped%20out.%3C/p%3E%3Cp%3EAt%20least%20we%20did%20not%20spill%20the%20more%20expensive%20cocoa%20powder%20this%20time!%3C/p%3E%3Cp%3EDo%20you%20know%20what%20an%20act%20of%20restraint%20it%20was%20for%20me%20to%20stand%20on%20the%20other%20side%20of%20the%20counter%20and%20take%20pictures%20while%20she%20whisked%20the%20dry%20ingredients?%3C/p%3E%3Cp%3EOK%20that%20act%20of%20restraint%20was%20nothing%20compared%20to%20this%20one.%20I%20admit%20it,%20after%20years%20of%20her%20begging%20me,%20this%20is%20the%20first%20time%20my%20inner%20control%20freak%20let%20her%20fill%20the%20muffin%20wells.%3C/p%3E%3Cp%3EStay%20tuned%20for%20more%20baking%20adventures%20with%20the%20kids!%20And%20witness%20me%20getting%20ever%20more%20laid%20back%E2%80%A6%20or%20if%20not%20laid%20back,%20at%20least%20a%20bit%20more%20relaxed.%3C/p%3E%3Cp%3EDouble%20Chocolate%20Chip%20Muffins%3C/p%3E%3Cp%3EClosely%20adapted%20from%20Muffins%20Galore%20(Catherine%20Atkinson)%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20F.%20Prepare%20your%20muffin%20tin:%20this%20recipe%20claims%20to%20make%2012%20muffins,%20but%20for%20us%20it%20made%2012%20standard%20muffins%20and%20about%2020%20mini%20muffins(!).%20Either%20generously%20grease%20the%20muffin%20wells,%20or%20line%20them%20with%20muffin%20liners%20and%20lightly%20spray%20with%20oil.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20sugar%20(break%20up%20any%20large%20lumps),%20cocoa%20powder,%20baking%20soda%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%20together%20the%20milk,%20melted%20butter,%20and%20eggs.%20Add%20the%20wet%20ingredients%20to%20the%20dry%20ingredients%20and%20mix%20gently%20until%20barely%20combined.%20Fold%20in%20the%20chocolate%20chips.%3C/p%3E%3Cp%3EFill%20the%20muffin%20wells%20approximately%204/5%20full.%20Place%20about%20an%20inch%20of%20water%20into%20any%20un-used%20muffin%20wells%20to%20prevent%20burning.%20Bake%20for%2020%20minutes,%20until%20a%20cake%20tester%20inserted%20into%20the%20center%20of%20one%20of%20the%20muffins%20comes%20out%20clean%20or%20with%20a%20just%20a%20few%20crumbs%20attached%20(if%20you%20hit%20a%20chocolate%20chip,%20try%20again).%3C/p%3E%3Cp%3ECool%20the%20muffins%20in%20the%20pan%20for%205%20minutes%20before%20turning%20out%20on%20a%20cooling%20rack.%20Serve%20warm%20or%20cold.%3C/p%3E%3Cp%3Echocolate,%3C/p%3E%3Cp%3Echocolate%20chips,%3C/p%3E%3Cp%3Ekids%20baking,%3C/p%3E%3Cp%3Emuffins%3C/p%3E){kind=link}
