- Remove skin and bones from halibut; cut into 1-inch cubes. Season halibut with salt and pepper. Saute/fry in 2 Tbsp. oil till barely cooked; remove halibut from skillet.
- Saute/fry vegetables in remaining oil till crisp-tender. Return halibut to skillet. Add in 1/4 tsp. salt and ginger. Combine chicken broth, cornstarch and lemon peel; add in to fish mix.
- Cook and stir till thickened and halibut flakes when tested with a fork.
- This recipe yields 4 servings.
