Ингредиенты

  • 2 lb halibut thawed if necessary
  • 1/2 c. finely-minced onions
  • 1/2 c. finely-minced green peppers
  • 1/2 c. finely-minced celery
  • 1/2 c. finely-minced carrots
  • 6 Tbsp. butter or possibly margarine divided
  • 3 c. chicken broth
  • 3/4 tsp salt
  • 1/2 tsp freshly-grnd white pepper
  • 2 c. lowfat milk
  • 3 Tbsp. flour
  • 21/2 c. shredded sharp Cheddar cheese
  • 1 Tbsp. chopped parsley

Инструкции

  1. Remove skin and bones from halibut; cut into bite-sized pcs. Saute/fry vegetables in 3 Tbsp. butter. Add in halibut, chicken broth, salt and pepper. Simmer, covered for 5 min.
  2. Add in lowfat milk and heat gently. Combine remaining 3 Tbsp. butter with flour and add in to chowder. Cook and stir till slightly thickened.
  3. Add in cheese; cook and stir over low heat till cheese melts. Sprinkle with parsley.
  4. This recipe yields 6 to 8 servings.
