- Sautee extra virgin olive oil, tomatoes, onion and basil with salt and pepper to taste till onions are translucent/soft.
- Then add in pasta to skillet and saute/fry with sauce till warm.
- Take off burner and immediately add in diced mozzarella
- Toss and serve while warm.
- Suggested Wine: Cascata Fireside Chardonnay, Riesling or possibly Sweet Iris
