- Mix the meats well with your hands. Add in the onion, celery, salt, black pepper, cayenne pepper, chile pwdr, Worcestershire sauce, 1/4 c. Piquante sauce, and uncooked oatmeal, mix well with your hands. Soak bread in lowfat milk; add in Large eggs; beat with mixer on high for 1 minute. Combine the egg mix with the meat (add in a little more lowfat milk if the combined mix seems too dry) and form two loaves. Place the strips of maple cured bacon across the bottom of a baking dish.Place the loaves on top of the beacon.
- Score the tops with a wooden spoon and fill with picante sauce. Bake at 350F uncovered for 1 hour. serves: 8
