%3C/p%3E%3Cp%3EI%20have%20been%20drinking%20a%20lot%20of%20tea%20over%20the%20last%20few%20days,%20because%20I%20have%20been%20fighting%20a%20cold,%20and%20nothing%20is%20quite%20as%20satisfying%20as%20Earl%20Grey%20with%20lemon.%20%20It%20really%20is%20my%20ultimate%20tea....%20I%20will%20admit%20to%20having%20a%20soft%20spot%20for%20first%20flush%20Darjeeling,%20but%20Earl%20Grey%20is%20my%20all%20time%20favorite.%20%20It's%20bright,%20rich,%20bold%20and%20exotic.%20%20It%20stands%20to%20reason%20that%20lemon%20is%20an%20excellent%20accompaniment%20to%20Earl%20Grey%20Tea,%20especially%20when%20your%20ill,%20since%20it%20already%20contains%20oil%20of%20Bergamot%20Orange.%20%20It's%20the%20perfect%20pairing,%20which%20is%20why%20Earl%20Grey%20is%20traditionally%20served%20with%20slices,%20not%20a%20wedge,%20of%20lemon%20to%20be%20added%20at%20the%20drinkers%20discretion%20and%20allowed%20to%20languidly%20float%20upon%20the%20sea%20of%20%22Grey%22%20within%20the%20cup.%20Sometimes,%20the%20lemon%20slices%20are%20even%20spiked%20with%20a%20clove%20in%20the%20center.%20%20But%20I%20will%20refrain%20from%20talking%20about%20British%20tea%20traditions%20as%20that%20would%20fill%20several%20posts.%3C/p%3E%3Cp%3EMy%20favorite%20brand%20has%20got%20to%20be%20the%20Tao%20of%20Tea's%20Organic%20Earl%20Grey,%20which%20is%20the%20perfect%20balance%20of%20rich%20Assam%20and%20Bergamot%20oil.%20%20I%20like%20their%20Smoked%20Earl%20Grey%20too,%20but%20it%20doesn't%20translate%20as%20well%20into%20one%20of%20my%20most%20loved%20winter%20drinks,%20the%20London%20Fog.%20%20A%20London%20Fog,%20is%20a%20delicious%20concoction%20made%20from%20Earl%20Grey%20steeped%20in%20steamed%20milk,%20with%20a%20hint%20of%20vanilla%20syrup.%20%20True,%20Earl%20Grey%20is%20not%20normally%20served%20with%20milk,%20because%20the%20Bergamot%20oil%20could%20potentially%20curdle%20the%20milk,%20but%20I%20find%20it%20to%20be%20a%20winter%20time%20necessity%20in%20dreary%20winter%20environs,%20such%20as%20the%20Pacific%20Northwest.%20%20(and%20I%20have%20never%20had%20one%20curdle%20on%20me)%20%20After%20all,%20oil%20of%20Bergamot%20is%20second%20only%20to%20lavender%20in%20it's%20ability%20to%20act%20as%20a%20stimulate%20and%20anti-depressant,%20while%20simultaneously%20acting%20as%20a%20sedative%20and%20relaxant,%20giving%20you%20an%20overall%20sense%20of%20well%20being.%3C/p%3E%3Cp%3ENow%20that%20I%20have%20expounded%20upon%20the%20liquid%20wonder%20that%20is%20Earl%20Grey,%20lets%20move%20on%20to%20something%20more%20solid...%20%20Shortbread.%3C/p%3E%3Cp%3EJust%20like%20ground%20coffee,%20ground%20tea%20is%20an%20excellent%20addition%20to%20Shortbread.%20%20Earl%20Grey's%20ability%20to%20play%20well%20with%20other%20flavors%20in%20such%20goodies%20as%20Chocolate%20Truffles%20and%20Pots%20de%20Creme%20makes%20it%20the%20perfect%20candidate%20for%20baking.%20%20It%20also%20lends%20itself%20well%20to%20other%20additions%20such%20as%20vanilla,%20almond,%20and%20a%20myriad%20of%20citrus%20zests.%20%20Add%20the%20zest%20of%20a%20Blood%20Orange%20and%20you%20have%20something%20even%20more%20exotic%20and%20out%20of%20the%20ordinary.%20%20Have%20a%20taste%20for%20Lavender?%20%20Try%20Lady%20Grey%20tea%20with%20Meyer%20Lemon%20zest%20instead....%20%20(though%20it%20really%20should%20be%20called%20Countess%20Grey,%20which%20is%20the%20accepted%20feminine%20form%20of%20Earl.%20I'm%20just%20sayin)%20%20Black%20tea%20not%20really%20your%20thing?%20%20Try%20Earl%20Green%20(Green%20tea%20with%20Bergamot%20oil)%20with%20Tangelo%20zest.%20%20They%20are%20ALL%20delicious.%3C/p%3E%3Cp%3ECombine%20Sugar,%20Butter%20and%20Salt%20in%20the%20bowl%20of%20your%20mixer.%3C/p%3E%3Cp%3EBeat%20until%20light%20and%20fluffy,%20while%20you%20grind%20the%20Earl%20Grey%20leaves%20into%20a%20powder.%3C/p%3E%3Cp%3EAdd%20the%20Earl%20Grey%20Powder%20along%20with%20the%20Blood%20Orange%20zest,%20and%20beat%20again%20until%20everything%20is%20combined.%3C/p%3E%3Cp%3ESlowly%20work%20in%20the%20Flour,%3C/p%3E%3Cp%3Eyou%20have%20a%20crumbly%20mixture.....%3C/p%3E%3Cp%3ETurn%20the%20dough%20out%20onto%20a%20piece%20of%20waxed%20paper%20or%20plastic%20wrap%20and%20work%20into%20a%20log%20with%20your%20hands.%3C/p%3E%3Cp%3ERefrigerate%20the%20log%20for%201-2%20hours,%20or%20until%20nice%20and%20firm.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325F%20(162C)%20degrees.%3C/p%3E%3Cp%3ESlice%20the%20log%20into%201/4%20inch%20(6mm)%20slices.%3C/p%3E%3Cp%3EPlace%20on%20an%20AirBake%20pan%20or%20on%20a%20regular%20pan%20lined%20with%20Parchment.%20(AirBake%20pans%20are%20excellent%20for%20shortbread%20-%20I%20always%20forget%20that%20I%20have%20them)%3C/p%3E%3Cp%3EBake%20for%2013-18%20minutes,%20or%20until%20the%20edges%20just%20begin%20to%20change%20color.%3C/p%3E%3Cp%3EMove%20to%20a%20rack%20and%20allow%20to%20cool%20completely.%3C/p%3E%3Cp%3EServe%20with%20tea%20of%20your%20choice.....%20(or%20coffee)%3C/p%3E%3Cp%3EMe?%20%20I%20double%20up%20and%20enjoy%20these%20with%20a%20cup%20of%20Earl%20Gr
