%20I%20decided%20to%20carry%20on%20the%20October%20tradition%20in%20a%20new%20place%20that%20really%20lends%20itself%20to%20Pumpkins%20and%20soups%20and%20fall%20like%20things.%20You%20can%20actually%20wear%20hand%20knit%20sweaters%20here%20folks!%20So%20here%20it%20goes.%3C/p%3E%3Cp%3EFavorite%20recipe%20here%20is%20from%20Epicurious%20and%20is%20the%20best%20pumpkin%20soup%20that%20I%20have%20had%20to%20date.%20I%20have%20made%20it%20for%20the%20last%203%20years%20and%20it%20never%20fails%20to%20make%20me%20happy.%20It%20starts%20off%20with%20toasting%20the%20shells%20of%20the%20shrimp%20that%20you%20are%20later%20going%20to%20cook%20and%20pour%20the%20soup%20over.%3C/p%3E%3Cp%3EI%20used%20fresh%20pumpkin%20for%20this%20dish%20so%20that%20I%20could%20have%20the%20seeds.%20That%20brings%20me%20to%20my%20second%20favorite%20October%20food.%20I%20love%20pumpkin%20seeds.%20I%20can't%20get%20enough%20of%20them.%20I%20love%20experimenting%20with%20them%20and%20different%20flavors.%3C/p%3E%3Cp%3EThis%20year%20I%20took%20a%20Siracha%20butter%20that%20I%20had%20made%20before%20for%20something%20else%20and%20added%20Worcester%20sauce.%20I%20then%20sprinkled%20with%20garlic%20salt%20and%20put%20in%20the%20oven.%20YUMMM!%20I%20also%20have%20a%20version%20with%20just%20plain%20butter,%20Worcester%20and%20garlic%20salt%20(I%20love%20this%20one%20too).%20Last%20but%20not%20least%20I%20tried%20one%20that%20had%20some%20curry%20powder%20and%20sugar%20and%20butter%20in%20it.%20Bleckkkk!%20I%20didn't%20like%20it.%20I%20had%20found%20the%20recipe%20somewhere%20and%20I%20don't%20remember%20where.%20So%202%20out%20of%203%20wasn't%20bad.%3C/p%3E%3Cp%3Epreparation%3C/p%3E%3Cp%3E1.%20Shrimp%20stock:%20Peel%20and%20devein%20shrimp,%20reserving%20the%20shells.%20Cover%20the%20shrimp%20and%20refrigerate.%20Heat%20the%20olive%20oil%20in%20a%20medium%20(3-quart)%20heavy-bottomed%20saucepan%20over%20high%20heat%20until%20it%20begins%20to%20smoke.%20Add%20the%20shrimp%20shells%20to%20the%20pan%20and%20cook,%20stirring%20constantly,%20until%20they%20turn%20deep%20orange%20and%20are%20just%20beginning%20to%20brown,%203%20to%204%20minutes.%20This%20step%E2%80%94pan%20roasting%20the%20shells%E2%80%94gives%20the%20stock%20much%20of%20its%20flavor,%20so%20take%20the%20time%20to%20do%20it%20carefully.%20The%20roasted%20shells%20should%20release%20a%20concentrated,%20toasty,%20shrimp%20aroma%20that%20will%20fill%20your%20kitchen.%20Add%20the%20wine%20to%20the%20pan,%20first%20turning%20off%20gas%20flames%20to%20prevent%20the%20alcohol%20from%20igniting,%20then%20boil%20it%20over%20medium%20heat%20until%20all%20the%20liquid%20is%20evaporated.%20Add%20the%20chicken%20stock,%20saffron,%20celery,%20onion,%20bay%20leaves,%20and%20sage.%20Bring%20to%20a%20boil,%20then%20reduce%20the%20heat%20to%20the%20lowest%20setting.%20Partially%20cover%20the%20pan%20and%20simmer%20gently%20for%2030%20minutes.%20Strain%20the%20stock%20through%20a%20fine%20sieve,%20pushing%20down%20on%20the%20solids%20with%20the%20back%20of%20a%20spoon%20to%20extract%20all%20the%20liquid.%20Rinse%20out%20the%20saucepan%20and%20pour%20the%20stock%20back%20into%20it.%3C/p%3E%3Cp%3E2.%20Soup:%20Whisk%20the%20pumpkin,%20cream,%20salt%20(omit%20if%20using%20canned%20stock),%20and%20cayenne%20into%20the%20shrimp%20stock.%20Bring%20the%20soup%20to%20a%20simmer,%20then%20cook%20very%20gently%20uncovered%20over%20low%20heat%20for%2010%20minutes.%20Stir%20in%20the%20lemon%20juice,%20taste,%20and%20season%20with%20black%20pepper%20and%20more%20salt%20if%20needed.%20(The%20soup%20can%20be%20made%20up%20to%20this%20point%20up%20to%201%20day%20ahead%20store%20covered%20in%20the%20refrigerator.%20Keep%20the%20peeled%20shrimp%20in%20a%20resealable%20bag%20buried%20in%20a%20bowl%20of%20ice%20in%20the%20refrigerator.)%3C/p%3E%3Cp%3E3.%20Finishing%20the%20soup:%20Pour%20the%20olive%20oil%20into%20a%20large%20saut%C3%A9%20pan%20placed%20over%20medium%20heat.%20When%20hot,%20add%20the%20reserved%20shrimp%20and%20sage%20and%20cook,%20tossing%20often,%20until%20the%20shrimp%20is%20just%20cooked%20through,%20pink,%20and%20no%20longer%20translucent,%20but%20not%20curled%20into%20a%20circle,%202%20to%203%20minutes.%20They%20should%20still%20have%20a%20tender%20snap%20when%20you%20bite%20into%20them.%20Arrange%20the%20shrimp%20in%20warmed%20serving%20bowls%20or%20a%20tureen.%20Bring%20the%20soup%20back%20to%20a%20simmer%20and%20then%20ladle%20it%20over%20the%20shrimp.%20Serve%20right%20away.%3C/p%3E%3Cp%3EVariation%3C/p%3E%3Cp%3ESubstitute%20winter%20squash%20pur%C3%A9e,%20such%20as%20butternut%20or%20acorn,%20for%20the%20pumpkin.%3C/p%3E%3Cp%3ENOTE%3C/p%3E%3Cp%3ETo%20make%20fresh%20pumpkin%20pur%C3%A9e,%20cut%20a%20sugar%20pumpkin%20in%20half%20and%20scrape%20out%20the%20seeds.%20Place%20it%20cut%20side%20down%20in%20a%20baking%20dish%20and%20pour%20in%20about%201/4%20inch%20of%20hot%20water.%20Bake%20it%20in%20a%20400%C2%B0F%20oven%20until%20the%20flesh%20is%20tender,%2040%20to%2050%20minutes.%20Turn%20the%20pumpkin%20halves%20cut%20side%20up%20to%20cool.%20Scoop%20the%20pumpkin%20flesh%20from%20the%20skin%20and%20pur%C3%A9e%20it%20in%20a%20food%20processor%20until%20smooth.%20Transfer%20the%20pur%C3%A9e%20to%20a%20large%20sieve%20lined%20with%20a%20double%20layer%20of%20cheesecloth%20and%20let%20it%20drain%20for%202-3%20hours%20until%20it%20is%20firm%20enough%20to%20hold%20its%20shape%20on%20a%20spoon.%3C/p%3E){kind=link}
