One of my favourite local fruits is banana. It is such a handy fruit, and especially useful in baking, making punches, cakes and making the simplest natural ice cream. It wasn’t until the frozen banana post was done sometime ago that I got the idea from DC ( DC again lol!!) to blend the bananas to make a healthy ice cream. So, being the adventurous one, I decided to try it out. Now, there are many variations of banana ice cream you can try, and you may just end up with a few more favourites of your own. For now let’s see what trini creations of banana ice cream we came up with.
I have six variations of banana ice cream to show you today. I believe I could have added more variations, but I think I should not be too greedy and leave some of it for you to come up with. That way we would have a lot more to talk about and there would be a lot of creativity going on.
Banana ice cream is a quick and easy, no fuss recipe; there is no custard to prepare and no lengthy churning. Just frozen bananas and a little processing in a blender with your own flavours added. Yes, it’s that simple. So simple you may not want to make ice cream the regular way for a while. Now, I have no intention to make churning ice cream (like my coconut milk ice cream) obsolete; I just want to show you all another option when you want a simple frozen dessert.
So here are my six banana recipes you must try.
1. The (Basic) Vegan Banana Ice Cream
First up is the basic vegan banana ice cream. It is simple without much additional ingredients. This is the base I used for the other variations with some minor variation in some ingredients. Here is how I made it.
Ingredients: Vegan Banana Ice Cream
1 1/2 cup ripe banana, chopped and frozen
1/2 tsp cinnamon powder
1/2 tsp vanilla extract
1/2 tsp almond essence
Directions:
Peel, chop and wrap the banana in plastic wrap and place in the freezer.
Blend the frozen bananas in a food processor or a blender until smooth.
Add the vanilla, cinnamon and almond to the banana. Place the mixture into the freezer until frozen.
Serve plain or with your favourite ice cream topping or fruits.
2. A Simple Banana Ice Cream (Dairy)
Now, I begin the other variations of my banana ice cream adventure. This variation is a notch up from the basic one as condensed milk (dairy) is added to it.
- Ingredients: Simple Banana Ice Cream (Dairy)
- 1 1/2 cup ripe banana, chopped and frozen
- 2 tsp vanilla extract
- 1/2 tsp. ground cinnamon
- 1/2 tsp. almond essence
- 1/2 tsp. coconut essence
- 4 tbsp condensed milk (you can also use cream, plain or flavored yogurt)
Directions:
Wrap and freeze the banana in plastic wrap. Unwrap frozen banana and place in a food processor or blender along with the other ingredients. Blend until smooth and freeze. Serve frozen plain or with your favourite ice cream topping or fruits.
3. Coconut Banana Ice Cream
This one was a favorite among my family. The coconut softened the strong taste of banana making it easier to enjoy this guiltless pleasure.
Ingredients: Coconut Banana Ice Cream
1 1/2 cup ripe banana, chopped and frozen
1/2 tsp vanilla extract
1/2 tsp almond essence
1 1/2 tsp coconut essence
4 tbsp condensed milk (or cream/plain or flavored yogurt)
8 tbsp. coconut cream
8tbsp coconut milk
1/2 tsp.cornstarch
Direction:
Wrap and freeze the banana in plastic wrap. Unwrap frozen banana and place in a food processor or blender along with the other ingredients. Blend until smooth and freeze. Serve frozen plain or with your favourite ice cream topping (such as nuts) or fruits.
4. Chocolate Chip Banana Ice Cream
From this ice cream I began my streak of creativity . A little cocoa or chocolate chips gave the banana ice cream a whole new taste, texture and life of its own.
Ingredients: Chocolate Chip Banana Ice Cream
1 1/2 cup ripe banana, chopped and frozen
1/2 tsp vanilla extract
1/2 tsp almond essence
1/2 tsp coconut essence
4 tbsp condensed milk (or cream/ plain or flavored yogurt)
5 tbsp chocolate chips
Directions:
Wrap and freeze the banana in plastic wrap. Unwrap frozen banana and place in a food processor or blender along with the other ingredients (except the chocolate chips). Blend until smooth.
Add the chocolate chips and blend slightly. Just enough to leave some chips chopped. Freeze. Serve frozen.
5. Peanut Butter Banana Ice Cream
This one will surprise you. It froze the easiest and stayed frozen the longest. It is my favourite. The rich creamy taste had me going for seconds.
Ingredients: Peanut Butter Banana Ice Cream
1 1/2 cup ripe banana, chopped and frozen
1/2 tsp vanilla extract
1/2 tsp almond essence
1/2 tsp coconut essence
4 tbsp condensed milk (or cream/ plain or flavored yogurt)
6 tbsp. peanut butter
Directions:
Wrap and freeze the banana in plastic wrap. Unwrap frozen banana and place in a food processor or blender along with the other ingredients. Blend until smooth and freeze. Serve frozen plain or with your favourite ice cream topping (such as nuts) or fruits.
6. Rum and Raisin Banana Ice Cream
Finally, an ice cream Rated R…for Rum lol!! The alcohol and raisin in this ice cream was delightful. It’s an ice cream meant to be enjoyed by adults who wish to sit back an relax….Actually while you’re having this one see your self in a hammock between two coconut trees looking out to the blue Caribbean Sea
Ingredients: Rum and Raisin Banana Ice Cream
2 1/2 cup ripe banana, chopped and frozen
1/2 tsp cinnamon
1/2 tsp vanilla extract
1/2 tsp almond essence
1/2 tsp coconut essence
9 tbsp condensed milk (or cream/ plain or flavored yogurt)
6 tbsp rum
1 1/4 cup raisins
Direction:
Soak the raisins in the rum overnight. Wrap and freeze the banana in plastic wrap. Unwrap frozen banana and place in a food processor or blender along with the other ingredients (except the raisins). Blend until smooth. Add the raisins and blend to chop. Freeze. Serve frozen.
So that was my six tempting delicious and guilt free banana ice creams. They are filling, not too sweet and are really a great alternative to the commercial ice cream we often buy. They are also filled with ingredients that have little or no processing done to them. So, feel free to go ahead and try any one of these guiltless pleasures or make up some of your own.
