%3C/p%3E%3Cp%3EPericatelli%20con%20Frutti%20di%20Mare%3C/p%3E%3Cp%3EI%20have%20a%20confession:%20there%20is%20a%20distinct%20possibility%20that%20pasta%20might%20be%20boring%20me%20ever%20so%20slightly.%20This%20isn%E2%80%99t%20so%20much%20against%20the%20pasta%20itself%20so%20much%20as%20I%20find%20myself%20a%20little%20bored%20with%20sauces.%20It%E2%80%99s%20summer,%20so%20the%20default%20topping%20I%20always%20seem%20to%20fall%20back%20on%20is%20some%20combination%20of%20tomato,%20basil%20and%20mozzarella%E2%80%93all%20good%20things,%20believe%20me,%20but%20I%20don%E2%80%99t%20want%20to%20burn%20out%20on%20that%20trifecta%20before%20August%20when%20the%20really%20good%20tomatoes%20are%20in%20the%20market.%20Defaulting%20back%20to%20my%20favorite%20ragus%20aren%E2%80%99t%20really%20an%20option%20either,%20because%20they%20are%20far%20too%20heavy%20after%20a%20hot%20day.%3C/p%3E%3Cp%3EFinding%20no%20inspiration%20in%20our%20cookbooks%20(I%20think%20this%20is%20a%20sign%20I%20should%20get%20a%20pasta-centric%20one,%20don%E2%80%99t%20you?)%20I%20turned%20to%20the%20New%20York%20Times.%20(Aside:%20can%20we%20discuss%20how%20awful%20this%20ad%20is?%20It%E2%80%99s%20like%20they%20decided%20to%20unironically%20pay%20homage%20to%20every%20infuriating%20stereotype%20about%20pretentious%20New%20Yorkers%20ever%20in%2030%20seconds,%20and%20make%20them%20sound%20like%20the%20American%20extras%20in%20Vicky%20Cristina%20Barcelona.%20These%20responses%20to%20it,%20on%20the%20other%20hand,%20are%20absolutely%20hysterical.)%20I%20probably%20used%20up%20the%20monthly%20allotted%20clicks%20on%20my%20searching%20mission,%20but%20it%20was%20totally%20worth%20it.%3C/p%3E%3Cp%3EPericatelli%20con%20Frutti%20di%20Mare,%20paired%20with%20Victory%20Golden%20Monkey%3C/p%3E%3Cp%3EWe%20took%20the%20recipe%20as%20a%20basis%20for%20some%20fun%20improvisation,%20using%20the%20liquor%20we%20had%20on%20hand%20and%20the%20shellfish%20we%20were%20in%20the%20mood%20to%20buy.%20I%20had%20to%20incorporate%20squid%20to%20get%20Michael%20fully%20onboard%20(he%20is%20a%20sucker%20for%20anything%20squid-related)%20and%20we%20ended%20up%20using%20bay%20scallops%20as%20the%20dry%20sea%20scallops%20were%20fairly%20pricey,%20but%20the%20whole%20thing%20ended%20up%20being%20totally%20delicious%20because%20we%20understood%20how%20long%20our%20substitutions%20had%20to%20cook%20and%20adjusted%20accordingly.%3C/p%3E%3Cp%3EPutting%20everything%20into%20a%20foil%20packet%20seems%20like%20a%20lot%20of%20work%20to%20only%20steam%20it%20for%20a%20few%20minutes,%20but%20it%E2%80%99s%20better%20than%20trying%20to%20wrestle%20a%20pan%20that%E2%80%99s%20brimming%20with%20shellfish%20and%20pasta,%20and%20the%20technique%20works%20well%20to%20meld%20all%20of%20the%20flavors%20together.%20Just%20use%20heavy-duty%20foil%20if%20you%20can%20as%20the%20packet%20is%20heavy%20(and%20big)%20and%20it%E2%80%99ll%20help%20you%20avoid%20spilling%20the%20sauce%20all%20over%20your%20baking%20sheet.%3C/p%3E%3Cp%3EIt%20was%20just%20the%20right%20change%20of%20pace%20I%20was%20looking%20for,%20and%20it%E2%80%99s%20kind%20of%20perfect%20for%20this%20weekend%20of%20fun%20and%20food.%3C/p%3E%3Cp%3EPericatelli%20con%20Frutti%20di%20Mare%3C/p%3E%3Cp%3EAdapted%20from%20The%20New%20York%20Times%3C/p%3E%3Cp%3EServes%204-6%3C/p%3E%3Cp%3EQuarter%20shrimp%20(cut%20lengthwise%20then%20crosswise)%20and%20set%20aside.%20Bring%20a%20large%20pot%20of%20water%20to%20a%20boil.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20heat%20the%20olive%20oil%20over%20medium-high%20heat%20and%20heat%20the%20shallots%20and%20garlic%20until%20fragrant,%20about%20a%20minute.%20Add%20the%20squid%20and%20cook%20for%20another%20minute.%20Add%20the%20shrimp%20and%20scallops%20and%20cook%20for%20another%20minute.%20Add%20the%20tomatoes%20and%20clam%20juice%20and%20bring%20the%20pot%20to%20a%20boil%20then%20reduce%20to%20a%20simmer%20for%20a%20minute%20before%20adding%20the%20vermouth,%20parsley,%20and%20oregano.%3C/p%3E%3Cp%3EAdd%20the%20clams,%20cover,%20and%20cook%20until%20they%20open%E2%80%93about%20four%20or%20five%20minutes%E2%80%93and%20then%20remove%20from%20heat.%20Make%20a%20foil%20packet:%20use%20twice%20the%20length%20of%20a%20baking%20sheet,%20then%20fold%20in%20half%20and%20securely%20crimp%20three%20of%20the%20four%20side,%20leaving%20one%20side%20open.%20Place%20on%20a%20lightly%20oiled%20baking%20sheet.%20Cook%20the%20pericatelli%20for%20about%20eight%20or%20nine%20minutes,%20drain,%20and%20place%20the%20pasta%20into%20the%20foil%20packet.%3C/p%3E%3Cp%3ESpoon%20the%20shellfish%20mixture%20into%20the%20packet,%20seal%20up%20the%20fourth%20side%20and%20heat%20the%20baking%20sheet%20on%20high.%20Steam%20for%20about%20two%20minutes%20or%20until%20the%20packet%20puffs,%20then%20slice%20open%20with%20a%20knife%20and%20serve%20immediately%20in%20bowls.%3C/p%3E){kind=link}
