%20Bakeapple%20Blossoms%3C/p%3E%3Cp%3EI%20know,%20I've%20been%20away%20a%20while,%20eh?%20Well,%20with%20finishing%20up%20my%20internship%20and%20last%20weekend's%20wedding%20show%20get-away,%20I%20haven't%20spent%20that%20much%20time%20in%20the%20kitchen.%20But%20with%20yesterday%20being%20the%20last%20day%20of%20my%20internship%20I%20thought%20maybe%20I%20should%20bring%20in%20some%20treats%20as%20a%20thank%20you%20to%20the%20staff.%20I%20didn't%20want%20to%20make%20anything%20too%20fancy%20because%20I%20didn't%20have%20a%20lot%20of%20time,%20so%20I%20decided%20to%20make%20some%20scratch%20shortbread.%20But%20that%20wasn't%20enough%20-%20they%20needed%20something%20more.%20So%20I%20took%20out%20a%20bag%20of%20bakeapples%20given%20to%20me%20by%20a%20good%20friend%20and%20made%20some%20of%20my%20no-fail%20berry%20cake%20filling,%20sieved%20out%20the%20seeds,%20and%20poured%20in%20into%20indentations%20in%20the%20shortbread.%20The%20result%20was%20exactly%20what%20I%20was%20going%20for%20-%20a%20simple%20treat%20with%20a%20interesting%20twist.%20They%20were%20huge%20hit%20and%20will%20stay%20in%20my%20back%20pocket%20now%20as%20a%20go-to%20recipe%20:)%20The%20cake%20filling%20can%20be%20replaced%20with%20any%20fruity%20preserve%20you%20like,%20but%20if%20you%20have%20access%20to%20bakeapples%20I%20would%20give%20'em%20a%20try!!!%3C/p%3E%3Cp%3EBakeapple%20Cake%20Filling%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E1%20cup%20bakeapples%3C/p%3E%3Cp%3E1/4%20cup%20water%3C/p%3E%3Cp%3E7%20tbsp%20sugar%20(adjust%20according%20to%20the%20tartness%20of%20your%20berries)%3C/p%3E%3Cp%3E2%20tsp%20corn%20starch%3C/p%3E%3Cp%3ESteps%3C/p%3E%3Cp%3E-Boil%20berries%20with%203/4%20of%20the%20water.%20Simmer%20for%203-5%20minutes.%3C/p%3E%3Cp%3E-Push%20the%20cooked%20berries%20through%20a%20fine%20sieve,%20discarding%20the%20seeds.%3C/p%3E%3Cp%3E-Whisk%20corn%20starch%20into%20remaining%20water.%20Add%20cornstarch%20mixture%20and%20sugar%20to%20berries.%3C/p%3E%3Cp%3E-Cook%20for%20another%202-3%20minutes.%20Let%20cool%20completely.%3C/p%3E%3Cp%3EShortbread%20Cookies%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3ESteps%3C/p%3E%3Cp%3E-%20Combine%20butter,%20sugar%20and%20extract%20in%20mixer%20bowl%20and%20beat%20until%20creamy.%3C/p%3E%3Cp%3E-%20Add%20the%20flour,%20scraping%20often%20until%20well%20mixed.%3C/p%3E%3Cp%3E-%20Refrigerate%20dough%20for%201%20hour.%20Work%20together%20with%20hands%20upon%20removing%20from%20refrigerator.%3C/p%3E%3Cp%3E-%20Heat%20oven%20to%20350%C2%B0F.%3C/p%3E%3Cp%3E-%20Shape%20dough%20into%201%20inch%20balls%20and%20place%20them%20on%20silpat%20or%20parchment%20lined%20cookie%20sheet.%3C/p%3E%3Cp%3E-%20Use%20a%20tsp%20measure%20to%20make%20an%20indentation%20in%20the%20center%20of%20each%20cookie.%3C/p%3E%3Cp%3E-%20Fill%20the%20indentation%20with%20a%20small%20dollop%20of%20your%20fruit%20filling.%3C/p%3E%3Cp%3E-%20Bake%20for%2014%20-%2018%20minutes,%20or%20until%20edges%20are%20lightly%20browned.%3C/p%3E%3Cp%3E-%20Place%20cookies%20in%20wire%20rack%20and%20cool%20completely.%3C/p%3E){kind=link}
