5 Recipes For Your Week Nights
Weeknight dinners can be the most challenging part of the week, especially when you’re trying to keep things Clean+Delicious. Here are 5-dinner ideas that can all be made in about 30 minutes (provided you do a little pre-preppin’).
1. KALE CAESAR SALAD – I find using a dark leafy green, like kale, is the secret to enjoying salads in the winter. Make your dressing and hard boiled eggs ahead of time, and this salad comes together in 10-minutes flat.
2. CROCK-POT SALSA CHICKEN– There is no recipe easier than salsa chicken. Before you leave for work, throw some chicken breast in the crock pot with a jar of your favorite salsa and voila, you’ll have yourself a big pot of delicious, shredded chicken when you get home from work. Try wrapping this chicken in a whole grain tortilla, scoop into a roasted sweet potato, put in on top of a salad, or serve with some rice and beans. The options are really endless.
3. CABBAGE AND POTATO SOUP – Warm, satisfying, and CHEAP. Cook up some potatoes and cabbage and you’ll have this insanely delicious soup in 30 minutes. Let it cook while you change your clothes and get ready for some nutritious comfort food tonight.
4. LAMB AND CHICKPEA CHILI – A fun spin on more traditional chili, I keep this lamb chili light by cutting the lamb with extra lean ground turkey. The lamb is so rich and flavorful that it cuts right through and you’ll never know you’re eating a lighter version of the original.
5. LENTIL JOES – All the flavor of Sloppy Joe’s, except instead of meat you’ve got lentils. Lentils are packed with protein (16g per cup) and if you use pre-cooked lentils (learn how to freeze lentils here) you will be eating this deliciousness in less than 30-minutes.
