30 Minute Sweet & Sour Meatball Bowls. Yes! You can this delicious dinner on the table in just 30 minutes! Talk about a perfect weeknight meal! I know, life is crazy and busy and somedays it seems like getting dinner on the table is an impossible feat. Heres the great news… you can absolutely do it and it can be delicious like these 30 Minute Sweet & Sour Meatball Bowls! I had some frozen meatballs on hand from when I made my Meatball Crescent Bites and wanted to use them in a not so typical way.  While I was browsing through my friend Christine’s blog, “Foody Schmoody, I’m Just Cooking”, I came across her Pineapple Stir Fry with Chicken Meatballs and thought YES lets go along with that idea! Yup, even us food bloggers get inspired by other bloggers. Now, this is rather different then her stir fry but it was certainly my inspiration for this dish. Now while yes I for the most part make meatballs from scratch there are times that I need help with shortcuts and this is one of those meals. The sauce is really easy and really rather delicious! The base is crushed pineapple then in goes bell peppers, red onion, garlic, ketchup, soy sauce, apple cider vinegar and brown sugar. It really only takes 5 minutes to get everything into the pot.  While the meatballs are simmering I steamed some broccoli and cooked up Japanese curly noodles. At the end of the cooking time on the noodles I reserved 1 cup of the cooking water and added that to the meatballs to get a little more of a sauce to the dish. This meal is simple, quick to throw together and full of great flavor. Print 30 Minute Sweet & Sour Meatball Bowls Author: Angela LeMoine   Ingredients 12- 2 oz frozen meatballs {or 24 bite sized meatballs} 1- 20 oz can crushed pineapple 2 orange or red bell peppers, chopped ¼ cup chopped red onion 3 garlic cloves, chopped 1 Tbsp light Soy Sauce 3 Tbsp ketchup 1 Tbsp apple cider vinegar {rice vinegar or white vinegar works too!} 2 Tbsp light brown sugar 1 pkg Japanese curly noodles 1 cup reserved cooking water broccoli florets, steamed 1 cup reserved cooking liquid Instructions Add the pineapple, peppers, onion, garlic, copy sauce, ketchup, vinegar, brown sugar and meatballs to a pot. Stir to distribute evenly. Simmer for 25 minutes, stirring occasionally. While the meatballs are simmering go ahead and steam the broccoli. Cook the curly noodles according to the package directions, reserving 1 cup of the cooking liquid before draining. Add the cooking water to the meatballs at the end and stir to combine.
