.%20%20I%20saw%20these%20beautiful%20red%20trout%20fillets%20and%20asked%20the%20butcher%20for%20two%20pounds%20(there%20were%20only%203%20of%20us%20but%20I%20figured%20my%20dad%20and%20I%20can%20pack%20down%20the%20food).%20%20When%20we%20got%20it%20home%20and%20I%20unwrapped%20it.%20%20I%20couldn%E2%80%99t%20believe%20how%20much%20two%20pounds%20of%20fish%20really%20is!%20%20Needless%20to%20say,%20I%20have%20a%20habit%20of%20getting%20way%20too%20much%20protein%20when%20left%20to%20my%20own%20devices%20and%20two%20pounds%20was%20about%20a%20half-pound%20too%20much%20for%20the%20three%20of%20us.%20%20We%20also%20got%20some%20organic%20artichokes,%20zucchini,%20and%20a%20spring%20salad%20mix.%20%20Now%20that%20I%20had%20all%20this%20fish,%20I%20had%20to%20figure%20out%20what%20to%20do%20with%20it.%20%20I%20knew%20I%20wanted%20to%20grill%20the%20artichokes%20and%20the%20zucchini%20so%20I%20figured%20why%20not%20grill%20the%20trout%20too!%3C/p%3E%3Cp%3E*One%20thing%20to%20note%20about%20my%20cooking%20style%20is%20that%20it%E2%80%99s%20very%20organic%20and%20not%20very%20precise.%20%20I%20just%20kinda%20go%20with%20it.%20%20So%20you%E2%80%99ll%20have%20to%20forgive%20the%20imprecise%20measurements%20and%20trust%20your%20instincts%20if%20you%20try%20this%20recipe!%3C/p%3E%3Cp%3ESet%20the%20trout%20out%20on%20a%20baking%20sheet.%20%20Allow%20to%20come%20to%20room%20temp.%3C/p%3E%3Cp%3EMeanwhile,%20in%20a%20small%20bowl%20combine%20all%20the%20other%20ingredients.%20%20It%20should%20have%20a%20nice%20syrup%20like%20texture.%20%20If%20it%E2%80%99s%20too%20watery%20throw%20in%20some%20more%20paprika%20and%20olive%20oil!%3C/p%3E%3Cp%3EOnce%20the%20marinade%20is%20ready,%20get%20down%20and%20dirty%20with%20those%20trout%20fillets.%20%20Rub%20that%20stuff%20on%20there%20like%20there%E2%80%99s%20no%20tomorrow.%20%20Each%20piece%20should%20be%20coated%20evenly.%20%20Allow%20to%20sit%20(on%20the%20counter%20or%20in%20the%20fridge)%20for%20at%20least%2015%20minutes.%20%20The%20lemon%20juice%20may%20turn%20the%20top%20of%20the%20fillets%20a%20grayish%20color,%20don%E2%80%99t%20worry,%20that%E2%80%99s%20perfectly%20normal.%3C/p%3E%3Cp%3EOnce%20the%20grill%20is%20heated%20up%20and%20ready%20to%20go,%20throw%20on%20the%20fillets.%20%20Cover%20the%20BBQ%20and%20let%20those%20guys%20cook%20for%20a%20little%20while%20(depending%20on%20thickness%20around%204-7%20minutes).%20%20Here%20comes%20the%20tricky%20part,%20flipping%20the%20fillets.%20%20Time%20to%20get%20out%20(or%20go%20buy)%20a%20long%20metal%20spatula.%20%20Trout%20isn%E2%80%99t%20the%20heartiest%20fish,%20in%20fact%20it%E2%80%99s%20pretty%20delicate.%20%20The%20flipping%20part%20of%20this%20is%20kinda%20like%20punching%20through%20a%20board%20(you%20know%20like%20karate%20kid),%20once%20you%20commit%20you%20have%20to%20go%20all%20the%20way.%20%20Cook%20on%20this%20side%20for%20another%202-4%20minutes.%3C/p%3E%3Cp%3EThat%E2%80%99s%20it!%20%20You%20should%20now%20have%20some%20incredibly%20scrumptious%20fish%20ready%20to%20serve.%3C/p%3E%3Cp%3EArtichokes%3C/p%3E%3Cp%3EThis%20is%20the%20first%20time%20that%20I%20actually%20cooked%20my%20own%20artichokes%20believe%20it%20or%20not.%20%20I%20mostly%20just%20made%20it%20up%20%20as%20I%20went%20after%20reading%20conflicting%20things%20online%20about%20the%20best%20way%20to%20grill%20them.%20%20It%20worked%20out%20pretty%20dang%20nicely%20if%20I%20may%20say%20so.%3C/p%3E%3Cp%3Eat%20least%201/2%20an%20artichoke%20per%20person%3C/p%3E%3Cp%3E1%20small%20lime%20or%20lemon%3C/p%3E%3Cp%3Eolive%20oil%3C/p%3E%3Cp%3Esalt%20and%20pepper%3C/p%3E%3Cp%3EGet%20a%20large%20pot,%20fill%20it%20with%20water,%20and%20get%20it%20boiling.%3C/p%3E%3Cp%3EMeanwhile,%20cut%20off%20the%20top%201/2%E2%80%B3%20%E2%80%93%201%E2%80%B3%20of%20the%20artichokes%20depending%20on%20size.%20%20Two%20things%20to%20note%20here:%201)%20Use%20the%20sharpest%20knife%20you%20have,%20these%20things%20are%20tough!%20%202)%20You%20should%20see%20a%20tiny%20bit%20of%20purple%20in%20the%20center%20of%20the%20now%20cut%20off%20top,%20though%20different%20varieties%20may%20look%20slightly%20different).%3C/p%3E%3Cp%3EUse%20that%20lime%20or%20lemon%20and%20juice%20up%20the%20%E2%80%9Cinjured%E2%80%9D%20leaves.%20%20Place%20the%20artichokes%20in%20a%20large%20bowl%20of%20cool%20water,%20squeeze%20the%20rest%20of%20the%20lemon%20or%20lime%20juice%20in%20there,%20and%20let%20them%20sit%20for%20about%2010%20minutes%20or%20so.%3C/p%3E%3Cp%3EAfter%20their%20soaking%20time%20is%20up,%20hold%20them%20upside%20down%20in%20the%20cool%20water%20bath%20and%20plunge%20each%20one%20up%20and%20down%20in%20the%20water%20while%20rotating%20from%20side-to-side%20for%20a%20bit%20(it%E2%80%99s%20gets%20out%20all%20kinds%20of%20dirt%20and%20bugs%20and%20stuff)%20and%20then%20toss%20them%20in%20to%20the%20boiling%20water.%3C/p%3E%3Cp%3ECook%20for%20about%2015%20minutes%20or%20until%20the%20base%20of%20the%20large%20leaves%20feel%20somewhat%20tender%20and%20the%20whole%20thing%20is%20noticeably%20more%20flexible.%3C/p%3E%3Cp%3EAllow%20to%20cool.%20%20Then%20cut%20in%20half%20on%20the%20vertical%20axis%20(through%20the%20stem,%20top%20to%20bottom).%3C/p%3E%3Cp%3EWith%20a%20spoon,%20scoop%20out%20all%20that%20hairy%20looking%20stuff.%20%20Don%E2%80%99t%20go%20too%20deep%20into%20the%20base%20though,%20that%E2%80%99s%20the%20%E2%80%9Cheart%E2%80%9D%20and%20it%E2%80%99s%20delicious!%20%20Get%20rid%20of%20the%20smallest%20rows%20of%20leaves%20as%20well,%20the%20ones%20with%20really%20spiky%20feeling%20tips%20that%20come%20out%20with%20virtually%20no%20resistance.%20%20Put%20the%20artichokes%20on%20a%20platter%20and%20drizzle%20with%20a%20little%20olive%20oil,%20add%20some%20salt%20and%20pepper,%20and%20they%E2%80%99re%20ready%20to%20grill!%3C/p%3E%3Cp%3EGrill%20%E2%80%9Copen%E2%80%9D%20side%20down%20for%20about%205-7%20minutes%20or%20until%20you%20see%20some%20nice%20grill%20marks%20and%20they%20just%20look%20so%20mouth%20watering%20you%20can%E2%80%99t%20bear%20to%20leave%20them%20on%20the%20grill%20a%20moment%20longer.%3C/p%3E%3Cp%3EServe%20with%20mayonnaise%20for%20dipping.%3C/p%3E%3Cp%3ESalad%20with%20Grilled%20Lime%20Slices%3C/p%3E%3Cp%3ELettuce%20of%20your%20choices%20(we%20used%20a%20spring%20mix,%20red%20leaf%20would%20be%20great%20too)%20for%20however%20many%20people%3C/p%3E%3Cp%3EGreek%20style%20yogurt%3C/p%3E%3Cp%3Ejuice%20from%201%20medium%20lime%3C/p%3E%3Cp%3EAgave%20nectar%3C/p%3E%3Cp%3E1%20medium%20lime%20thinly%20sliced%3C/p%3E%3Cp%3E1%20red%20bell%20pepper%3C/p%3E%3Cp%3Esalt%20and%20pepper%3C/p%3E%3Cp%3EGrill%20the%20lime%20slices%20until%20they%20start%20to%20caramelize%20a%20bit%20and%20you%20see%20some%20nice%20grill%20marks.*%3C/p%3E%3Cp%3EFor%20the%20dressing,%20combine%20a%20good%20dollop%20or%20two%20of%20the%20yogurt,%20the%20lime%20juice,%20a%20healthy%20drizzle%20of%20agave%20nectar,%20and%20salt%20and%20pepper%20in%20a%20bowl.%3C/p%3E%3Cp%3EToss%20the%20lettuce,%20sliced%20bell%20pepper%20and%20the%20dressing%20in%20a%20large%20salad%20bowl.%20%20Dish.%20%20Then%20throw%20a%20couple%20of%20the%20lime%20slices%20on%20there%20to%20make%20it%20look%20pretty%20(and%20taste%20amazing%20too)!%3C/p%3E%3Cp%3E*the%20grilled%20lime%20slices%20are%20equally%20good%20with%20the%20trout%20fillets!%3C/p%3E){kind=link}
