Each morning starts pretty much the same around here. After springing out of bed in a fabulous mood (yeah, just kidding), I help my boys with various odd and ends as they get themselves ready for the school day. Once they head out the door, I make a beeline to the bedroom to pull on my running clothes, just in time to meet my running partner to knock out a few miles.
As soon as we start our cool down, it’s like a trigger goes off in my brain and hunger settles in fiercely. By the time I walk through the door, I can barely think of anything but my soon-to-be-wolfed-down fried eggs and avocado, doused in hot sauce.
Every single morning. And I wouldn’t change it for a thousand bucks. A million, maybe. I could buy an avocado grove with a million!
In the meantime, I’m content to dream up as many healthy avocado recipes as my brain can handle. They’re one of the only ingredients I can think of that actually works in appetizers, entrees, side dishes, soups, salads and even desserts (subbing in for other fats).
