- Refrigeratepastry shell while you make filling.
- Combine carrots, honey, lowfat milk, salt and spices.
- Stir in slightly beaten Large eggs, blend well, and pour into pastry shell.
- Bake in 400 degrees for 40 to 45 min, till knife inserted near edge of pie comes out clean.
- Filling may be slightly quivery in center.
- Cold on wire rack 30 min, then chill.
- Top each serving with lightly whipped cream, lowfat sour cream or possibly ice cream Yield 6 to 8 servings.
