%3C/p%3E%3Cp%3ELike%20most%20of%20us,%20my%20memories%20of%20Christmas%20are%20crowded%20with%20smells%20from%20Grandma%E2%80%99s%20kitchen.%20She%20was%20a%20master%20craftsman%20in%20her%20art%20and%20the%20holiday%20season%20from%20Thanksgiving%20to%20New%20Years%20Eve%20was%20an%20ongoing%20celebration%20of%20home-baked%20sweets%20including%20fruit%20pies,%20cream%20pies,%20cobblers,%20cakes,%20cookies,%20cinnamon%20rolls,%20and%20donuts.%20Candies,%20such%20as%20fudge%20and%20lemon-bars,%20though%20faithfully%20present%20were%20relegated%20to%20second%20string%20when%20forced%20to%20compete%20with%20Grandma%E2%80%99s%20star%20performers.%20One%20year%20I%20was%20intrigued%20to%20spot%20a%20new-comer%20among%20the%20home-made%20candies.%20It%20was%20a%20chocolate%20of%20some%20sort,%20rough%20in%20shape%20and%20kept%20in%20the%20refrigerator.%20Grandma%20simply%20called%20them%20%E2%80%9Cfrangos%E2%80%9D.%20Lighter%20in%20texture%20than%20fudge,%20yet%20rich%20and%20minty,%20these%20chocolates%20soon%20dominated%20the%20%E2%80%9Ccandy%E2%80%9D%20category%20and%20subsequent%20years%20witnessed%20the%20unnoticed%20departure%20of%20the%20other%20candies%20from%20the%20menu.%20As%20the%20years%20progressed,%20family%20tastes%20slowly%20changed%20with%20the%20times%20becoming%20more%20health%20conscious.%20The%20quantity%20and%20variety%20of%20Christmas%20desserts%20dwindled.%20Instead%20of%20reproducing%20the%20entire%20array%20of%20baked%20desserts,%20grandma%20would%20select%20a%20few%20favorites%20to%20highlight%20from%20year%20to%20year.%20The%20minty%20chocolates,%20however,%20had%20established%20themselves%20as%20a%20Christmas%20staple%20and%20so,%20while%20never%20center-stage,%20they%20became%20an%20ongoing%20Christmas%20tradition.%3C/p%3E%3Cp%3EAfter%20college,%20I%20moved%20to%20the%20South%20and%20took%20the%20recipe%20with%20me.%20I%20soon%20discovered,%20however,%20that%20the%20soft%20chocolates%20did%20not%20fare%20well%20in%20the%20warm%20Southern%20climate.%20I%20modified%20the%20recipe%20slightly%20by%20portioning%20the%20chocolates%20onto%20wax%20paper,%20chilling%20them%20in%20the%20freezer,%20and%20then%20dipping%20them%20in%20melted%20chocolate%20chips.%20This%20created%20a%20%E2%80%9Ctruffle%E2%80%9D%20with%20a%20hard%20chocolate%20shell%20and%20a%20soft%20minty%20center%20that%20can%20remain%20indefinitely%20at%20room%20temperature%20and%20travel%20to%20parties.%20In%20the%20years%20since,%20it%20has%20become%20my%20most%20popular%20(and%20requested)%20party%20contribution.%3C/p%3E%3Cp%3EHere%20is%20the%20recipe:%3C/p%3E%3Cp%3EDark%20Mint%20Truffles:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E*Note:%20Do%20not%20use%20artificial%20flavorings.%20They%20contain%20too%20much%20water%20which%20will%20make%20your%20chocolate%20grainy.%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ECover%20two%20cookie%20sheets%20with%20wax%20paper%20and%20set%20aside.%3C/p%3E%3Cp%3ECream%20sugar%20and%20butter,%20then%20blend%20in%20two%20egg%20whites,%20one%20at%20a%20time,%20making%20sure%20each%20is%20fully%20combined%20before%20adding%20the%20next.%20The%20mixture%20will%20resemble%20cake%20frosting%20at%20this%20stage.%20Mix%20in%20vanilla%20and%20mint%20extract.%20Melt%20one%20bag%20of%20chocolate%20in%20a%20microwave%20(60%20to%2090%20seconds,%20be%20sure%20to%20mix%20well%20after%20the%20first%20minute).%20Allow%20chocolate%20to%20cool%20slightly%20and%20then%20add%20to%20mixture.%20Combine%20thoroughly%20(filling%20will%20look%20like%20cake%20batter)%20and%20spoon%20onto%20wax%20paper%20(like%20making%20small%20drop%20cookies).%20Place%20in%20freezer%20for%20ten%20to%20fifteen%20minutes%20to%20set%20firmly.%3C/p%3E%3Cp%3EMelt%20the%20other%20two%20bags%20of%20chocolate%20in%20a%20double%20boiler.%20Remove%20fillings%20from%20freezer,%20dip%20in%20melted%20chocolate%20and%20return%20to%20wax%20paper.%20When%20all%20the%20chocolates%20are%20dipped,%20return%20them%20to%20the%20freezer%20for%20another%20ten%20to%20fifteen%20minutes%20to%20allow%20the%20chocolate%20to%20set.%20They%20may%20then%20be%20moved%20to%20air-tight%20containers%20for%20storage%20or%20served.%20Allow%20them%20to%20warm%20to%20room%20temperature%20before%20serving.%3C/p%3E%3Cp%3EHe%20also%20has:%20peanut%20butter,%20white%20raspberry,%20and%20english%20toffee%20truffles.%20Let%20me%20know%20if%20you%20want%20any%20of%20those%20recipes.%3C/p%3E%3Cp%3EThanks%20Brian.%20Keep%20making%20that%20chocolate.%20I%20know%20everyone%20who%20eats%20one%20feels%20the%20need%20to%20eat%20the%20rest%20of%20them%20(and%20then%20go%20run)!%3C/p%3E){kind=link}
