.%3C/p%3E%3Cp%3EVictory%20Golden%20Monkey-Steamed%20Mussels%20with%20Breadcrumbs%20over%20Spaghettini%3C/p%3E%3Cp%3EOne%20lone%20bottle%20of%20Victory%20Golden%20Monkey%20has%20been%20languishing%20in%20our%20fridge%20for%20a%20while%20not%20because%20we%20don%E2%80%99t%20like%20it,%20but%20out%20of%20a%20strange%20dance%20of%20politeness.%20Neither%20Michael%20nor%20I%20wanted%20to%20be%20the%20one%20to%20finish%20it%20off,%20I%20think,%20out%20of%20deference%20to%20the%20other,%20and%20so%20it%20sat%20by%20itself%20at%20the%20bottom%20of%20the%20kitchen%20door%20shelf,%20neglected%20and%20forgotten.%20Que%20triste.%3C/p%3E%3Cp%3ELest%20you%20start%20feeling%20too%20bad%20for%20this%20bottle%20of%20beer,%20I%20urge%20you%20to%20watch%20this%20to%20snap%20you%20out%20of%20your%20funk:%3C/p%3E%3Cp%3EOK,%20so%20I%20just%20wanted%20any%20excuse%20I%20could%20find%20to%20post%20this%E2%80%93sue%20me!%20More%20importantly,%20if%20you%20want%20to%20see%20what%20we%20did%20with%20this%20lovely%20bottle%20of%20beer,%20well,%20follow%20me%20after%20the%20jump!%3C/p%3E%3Cp%3EWhile%20Michael%20is%20generally%20el%20capitan%20del%20carne%20in%20our%20kitchen,%20there%20are%20a%20few%20proteins%20out%20there%20that%20I%E2%80%99m%20more%20than%20happy%20to%20tackle%20without%20any%20input%20from%20him,%20namely%20clams%20and%20mussels.%20Mussels%20are%20especially%20great%20because%20they%20tend%20to%20be%20the%20cheaper%20of%20seafood%20options,%20plus%20they%20score%20high%20on%20the%20sustainability%20scale.%20There%20really%20isn%E2%80%99t%20much%20involved%20in%20steaming%20them%20well:%20just%20get%20a%20nice%20heavy-bottomed%20pot%20(cast%20iron%20is%20perfect%20here),%20melt%20some%20butter%20and%20some%20aromatics,%20add%20in%20the%20mussels%20and%20some%20sort%20of%20cooking%20liquid,%20bring%20the%20heat%20up,%20cover,%20and%20let%20them%20steam.%20Any%20that%20refuse%20to%20open%20after%205-8%20minutes%20or%20so%20should%20be%20discarded.%3C/p%3E%3Cp%3EIf%20I%E2%80%99m%20in%20the%20mood%20for%20a%20little%20moules%20marini%C3%A8res%20%20I%E2%80%99ll%20look%20to%20a%20nice%20dry%20white%20wine%20(and%20perhaps%20Michael%20will%20decide%20to%20make%20some%20frites%20to%20go%20along%20with%20them),%20but%20there%20is%20something%20so%20great%20about%20the%20aroma%20of%20your%20favorite%20beer%20filling%20you%20kitchen%20with%20delicious%20steam.%20This%20is%20a%20take%20on%20a%20dish%20that%20I%20made%20back%20in%20the%20wintertime,%20but%20I%20was%20craving%20something%20a%20little%20more%20substantial%20than%20just%20bread%20to%20sop%20up%20the%20sauce%20so%20I%20added%20some%20spaghettini%20to%20the%20party.%3C/p%3E%3Cp%3EYou%20might%20think%20that%20this%20combined%20with%20the%20hearts%20of%20palm%20salad%20that%20Michael%20made%20would%20make%20for%20a%20lot%20of%20food%20for%20two%20people,%20but%20it%20ended%20up%20being%20a%20sort%20of%20pot-luck:%20we%20each%20%E2%80%9Cbrought%E2%80%9D%20a%20dish%20to%20the%20table%20that%20we%20wanted%20to%20have%20and%20made%20sure%20we%20had%20enough%20to%20share%20a%20substantial%20taste%20with%20each%20other.%20Yes,%20we%20both%20ended%20up%20eating%20our%20own%20dish%20more%20than%20the%20other,%20but%20sometimes%20a%20shared%20kitchen%20calls%20for%20a%20compromise%20and%20an%20allowance%20to%20indulge%20as%20we%20please.%20It%20sure%20beats%20leaving%20a%20delicious%20beer%20to%20languish%20in%20the%20fridge.%3C/p%3E%3Cp%3EVictory%20Golden-Monkey%20Mussels%20with%20Breadcrumbs%20Over%20Spaghettini%3C/p%3E%3Cp%3EServes%202%20with%20several%20lunches%E2%80%99%20worth%20of%20leftovers%3C/p%3E%3Cp%3EBring%20a%20pot%20of%20water%20(at%20least%202%20quarts)%20to%20a%20boil,%20season%20with%20salt%20and%20cook%20the%20pasta%20to%20about%20a%20minute%20or%20two%20less%20than%20package%20directions.%20Reserve%20one%20cup%20of%20the%20pasta%20cooking%20liquid%20and%20then%20drain%20the%20rest,%20returning%20the%20pasta%20to%20the%20pot.%20Drizzle%20a%20little%20olive%20oil%20on%20the%20pasta%20to%20keep%20it%20from%20sticking%20and%20toss%20with%20half%20of%20the%20toasted%20breadcrumbs.%3C/p%3E%3Cp%3EMeanwhile,%20melt%20the%20butter%20in%20a%20Dutch%20oven%20(ours%20is%207.25%20qt)%20and%20then%20add%20shallots%20and%20garlic;%20cook%20until%20shallots%20are%20soft%20and%20garlic%20is%20fragrant.%20Add%20mussels%20to%20the%20pot%20and%20then%20add%20the%20beer;%20cover%20the%20pot%20and%20bring%20to%20a%20high%20heat.%20Steam%20the%20mussels%20for%20about%205-8%20minutes%20until%20they%20open%20(discard%20any%20that%20fail%20to%20do%20so),%20lower%20the%20heat,%20add%20the%20remaining%20breadcrumbs%20to%20the%20pot%20and%20toss%20to%20coat.%20Remove%20mussels%20from%20the%20pot.%20Combine%20the%20buttery%20beer-shallots-and-garlic%20sauce%20to%20the%20pasta,%20toss%20to%20coat,%20garnish%20with%20parsley%20and%20then%20plate,%20adding%20the%20mussels%20to%20the%20top.%20Season%20with%20salt%20and%20pepper%20to%20taste,%20if%20desired.%3C/p%3E%3Cp%3EBuon%20apetito!%3C/p%
