%3C/p%3E%3Cp%3EGemelli%20alla%20Scuie%20Scuie%20with%20Kumatoes%20and%20Fresh%20Mozzarella%3C/p%3E%3Cp%3EThe%20heat%20wave%20that%20Michael%20complained%20about%20yesterday%20is%20finally%20easing%20up%20here%E2%80%A6at%20least%20a%20little.%20It%E2%80%99s%20still%20so%20hot%20in%20the%20mornings%20that%20I%20have%20to%20hold%20off%20on%20applying%20makeup%20until%20I%20get%20to%20work%20because%20even%20a%20cup%20of%20tea%20will%20create%20a%20fine%20mist%20of%20perspiration%20on%20my%20face%20(and%20if%20I%20have%20to%20run%20to%20catch%20the%20bus,%20then%20I%E2%80%99m%20really%20SOL).%20The%20heat%20means%20that%20our%20apartment%20is%20shrouded%20in%20darkness%20in%20an%20effort%20to%20keep%20it%20cooler%20during%20the%20day%20and%20Michael%20has%20been%20desperate%20to%20avoid%20using%20the%20stove%20as%20much%20as%20possible.%20It%20seems%20like%20we%20will%20finally%20be%20getting%20a%20reprieve%20of%20sorts%20in%20the%20coming%20days,%20which%20means%20that%20we%20once%20again%20will%20have%20a%20little%20more%20flexibility%20in%20what%20we%20have%20for%20dinner.%20This%20meal%20was%20from%20a%20few%20weekends%20ago%E2%80%93when%20it%20was%20hot,%20but%20not%20unbearably%20so%E2%80%93and%20while%20it%20does%20require%20a%20little%20bit%20of%20stovetop%20action,%20the%20results%20are%20totally%20worth%20a%20little%20sweat.%20We%20had%20a%20box%20of%20kumatoes%20and%20didn%E2%80%99t%20know%20what%20to%20do%20with%20them%20until%20I%20stumbled%20across%20an%20old%20recipe%20in%20Giada%E2%80%99s%20Family%20Dinners%20and%20was%20immediately%20inspired:%20%E2%80%98scuie%20%E2%80%98scuie!%20It%E2%80%99s%20a%20simple%20pasta%20dish%20that%20calls%20for%20tomatoes,%20fresh%20mozzarella,%20garlic%20and%20basil%20(which%20we%20didn%E2%80%99t%20have,%20but%20oh%20well!)%20that%20you%20cook%20gently%20together%20for%20just%20a%20few%20minutes%20until%20the%20tomatoes%20soften%20and%20the%20cheese%20melts.%20Giada%20notes%20that%20it%E2%80%99s%20one%20of%20those%20dishes%20that%20evolved%20to%20use%20up%20leftover%20tomatoes%20after%20making%20vats%20of%20homemade%20sauce,%20but%20I%E2%80%99m%20inclined%20to%20think%20that%20it%E2%80%99s%20also%20a%20wonderful%20excuse%20to%20indulge%20in%20some%20excellent%20tomatoes%20such%20as%20heirlooms%20or%20kumatoes,%20as%20I%E2%80%99ve%20done%20here.%20It%E2%80%99s%20a%20great%20one-dish%20kind%20of%20comfort%20meal%20that%20translates%20well%20to%20leftovers%20and%20is%20perfect%20for%20curling%20up%20on%20the%20couch%20with%20a%20glass%20of%20wine%20and%20your%20favorite%20television%20show%20or%20movie.%3C/p%3E%3Cp%3EGemelli%20alla%20%E2%80%98Scuie%20%E2%80%98Scuie%3C/p%3E%3Cp%3Eadapted%20from%20Giada%E2%80%99s%20Family%20Dinners%3C/p%3E%3Cp%3Eserves%204-5%20or%20fewer%20with%20lots%20of%20leftovers%3C/p%3E%3Cp%3E8-12%20basil%20leaves,%20thinly%20sliced%20(note:%20don%E2%80%99t%20buy%20basil%20specifically%20for%20this%20recipe%20unless%20you%E2%80%99re%20also%20going%20to%20use%20it%20in%20something%20else.%20If%20you%20don%E2%80%99t%20have%20it,%20use%20parsley,%20thyme%20or%20oregano%20if%20you%20have%20any%20of%20those%20on%20hand.)%3C/p%3E%3Cp%3EOlive%20oil%3C/p%3E%3Cp%3EKosher%20salt%20and%20pepper%3C/p%3E%3Cp%3EBring%20a%20pot%20of%20water%20to%20a%20boil,%20season%20well%20with%20salt,%20and%20cook%20pasta%20to%20about%20a%20minute%20or%20two%20less%20than%20package%20directions;%20drain%20and%20place%20back%20into%20now-empty%20pot.%20Take%20a%20skillet%20and%20heat%20about%202%20tablespoons%20of%20olive%20oil%20over%20medium%20heat,%20and%20then%20add%20garlic.%20Cook%20for%2030%20seconds%20to%20a%20minute%20or%20until%20garlic%20is%20fragrant%20but%20not%20brown%20and%20remove%20from%20heat.%20Add%20tomatoes%20and%20let%20them%20cook%20slightly%20in%20the%20warm%20oil,%20then%20add%20garlic,%20tomatoes,%20oil%20and%20also%20the%20cheese%20to%20the%20cooked%20pasta%20and%20stir%20to%20combine.%20Season%20with%20salt%20and%20combine%20again.%20Top%20with%20basil%20and%20serve.%3C/p%3E%3Cp%3ENote:%20if%20you%E2%80%99re%20using%20regular%20tomatoes%20as%20opposed%20to%20kumatoes,%20you%20can%20cook%20them%20for%20about%202%20minutes%20over%20medium%20heat.%20Kumatoes%20are%20more%20delicate%20so%20I%20didn%E2%80%99t%20want%20to%20lose%20their%20texture,%20but%20warming%20them%20a%20little%20brings%20out%20their%20sweetness%20just%20enough.%3C/p%3E%3Cp%3EBuon%20apetito!%3C/p%3E){kind=link}
