Cornell Mix (flour)

To make this nutritionally superior white flour use unbleached flour for this option developed at Cornell University many years ago.
Put into a 1-cup dry measure:
1 TBSP. soy flour
1 TBSP. dry milk powder
1 TBSP. wheat germ
And, fill with unbleached flour.
It makes a nice transition between white flour (which is bleached, and missing nutrients) to whole wheat. Different flours are good for different things. I used this flour when I did a lot more baking for 3 growing boys!

Right on, Jann! They won`t even notice the difference...the boys hate when I tell them something is ``good for them``..they become very suspicious. LOL!!

Cornell is a wonderful resouce for all sorts of great things. Their research programs in all areas of agriculture are first-rate. We are growing several varieties of grapes developed there and love it when they come up with something new. This was an excellent post, Jann! Thanks for the link.

Just a little more background on Ag and Nutrition Services. All states have a university where they do agricultural research. Each county in the state has Cooperative Extension Services for farmers as well as homemakers (4-H clubs, etc.). They are located at the county seat. Most are online, and some have great newsletters, like Ohio State. Very good to know you are growing grapes developed by Cornell (NY). I went to college in northern PA, and worked for the PA State Cooperative Extension for two summers. Great job while in college!
