Mold on Maple Syrup

Real quality pure maple syrup is very close to being a pure sugar. When you purchase pure maple syrup, you may occasionally find, if you do not regularly use the syrup, there appears to be a mold on the surface of the syrup. Uh-oh, you say, and move toward the trash.

DO NOT THROW YOUR INVESTMENT AWAY!

All you have to do is decant the container of maple syrup into a sauce pan, heat it to boiling, immediately remove from the heat, skim the surface and discard the skimmed matter and reseal in a clean container.

No problem, no loss of quality, no liability, no illness, no financial loss - just good maple syrup. Really.

I'm from the South and we have the same problem with can syrups.

We also follow the same method to correct the situation, sometimes if in a hurry just skimming the mold off and using the syrup. I've never seen any adverse results in a lot of years but it is best to heat to boiling.

Omg, do you know how many times I have had to toss the maple syrup because it was moldy? Too many times to count. Arrrgh! How have I managed to miss all these great posts?
