Medium High Heat

What setting on a stove top would a professional consider to be medium high? I set mine at 6.5ish... and I burned my chicken...so I'm guessing my oven runs hot? I just don't know. I've always had a problem with that... I always get the oil too hot and then when I put, whatever, in it burns it... Is this something that you have to just play around with until you figure it out? Cause I'm not figure'n!

Six on my range top is very hot, I actually start out on four and wait . I put a wooden spoon in the oil, when it begins to have bubbles around it, I add the food. If the bubbles are running fast and furious I lower it... You only want a high heat when you have breaded chicken boneless very thinly cut so it sears quick on both sides to hold in the juices . I think you should adjust by starting out low and warm it up start on four, raise it accordingly. these things can be tricky.

Thanks for the tip! I also find that if I start out too high and then try to lower it, it doesn't really cool down. I have one of those electric stoves with the glass top... they don't cool down very well. I'll definitely try the spoon trick. Thanks again.
