July: National Picnic Month

Corn Relish also called English Pea Salad is usually found in many picnic baskets instead of the usual jar of sweet pickles. This dish is used as a side condiment and ate along side your meals or used to top hot dogs with. This condiment is served sweet and cold and is popular during the hot summer months.

1 can english peas drained
1 can shoe peg corn
1 small jar pimentos
1 small diced onion
1/2 cup diced celery
1/2 cup mixed color bell peppers
1/2 cup oil
1/2 cup vinegar ( I like apple cider vinegar)
1/2 cup of sugar
1 teaspoon salt
Small Dice onions and celery.

Boil sugar and vinegar until dissolved, add oil and stir.
Turn heat off and add all other ingredients. Mix.
Place in a jar and refrigerate over night before eating.
