Your first dumplings were scrumptious! I hope you learned a few good techniques in making dim sum - working with the different dough, folding and pleating dumplings and the various methods of cooking the dumplings. Dim sum is an art!

Hi Linda - can you tell me how long you'd recommend the steamed buns to rise before stuffing and steaming? I feel like we didn't give them enought time. Thanks!
2-3 hours for the first rise, then add the baking powder. You cna stuff the buns immediately as the baking powder is activated. However, give it 15-20 minutes to rise before steaming.
I also recommend using "00" finely milled bread flour or high protein bread flour for better texture.
