when cooking your dumplings in your chicken broth u found a useful tip when broth boils and you add your dumplings cover tightly with your lid for ten minutes it makes the dumplings fluffier

Yes I couldn't believe the difference it made they were so fluffy and moist

Yes, my mother taught me that you need to cover the dumplings once they are in the simmering liquid. Don't peek for the 10 - 15 minutes they need to cook, otherwise they won't steam properly. She was right, as occasionally I would become impatient and lift the lid to see how the dumplings were coming along, only to have them turn out stodgy.

Also on the dumpling kick; before you sink the spoon into the dumpling batter, (and after each dumpling goes into the pot), dip the spoon into the stew or cooking liquid to coat the surface first. The dumplings will then slide right off the spoon.
