I had Polio when I was 3 in 1952. I was diagnosed with Post Polio Syndrome in 1986, and cooking has become more and more of a problem for me. I love to create and cook great meals, but find that time spent standing on my feet cooking, or even stirring a pot is my main concern. I have to cook quick and easy dishes, but doing that without sacrificing taste is hard. I have always been a "scratch" cook, but I have had to learn to use some convenience products now that I once would have not allowed in my kitchen!
These days, I still cook, but have learned some short cuts and have found some really easy, quick recipes that I can either make ahead or cook very quickly. I am lucky! My husband shows his appreciation for my cooking by taking over after we finish eating and clearing the table, cleaning up the kitchen and loading the dishwasher, and even unloading it the next morning before I get up!

My Grandmothers were both great cooks! I never saw either one of them with a cookbook! I got my love for cake and pie baking from my father's Mother, who always had at least 1 dessert on hand at all times. I used to be the designated the "cake lady" at several monthly supper clubs that we belonged to. I have had to learn how to bake more simple cakes now that I have Post Polio Syndrome and can't spend as much time in the kitchen.
My Daddy loved to cook as well. I did get him to write down his famous BBQ sauce when he was preparing chickens to sell at his grocery store and for big crowds. I regret that I didn't get more of his recipes!
I was introduced into Mexican food when I married a native Pasadena guy whose family never had a meal that didn't include a Mexican dish or appetizer. I picked up some great recipes from his Mother and Grandmother when I lived in California. They are definitely in my repertoire now!
I am originally from Murrells Inlet, SC, and was brought up where there were more seafood restaurants than any other businesses in town. It was dubbed "The Seafood Capitol of South Carolina". I have a couple of "stand by" seafood recipes that I mostly "wing", but have written down for my step-daughters.
So I hope that I can share some of my "Tried and True" recipes with you. There will be a lot of tips and hints that I have had to learn along the way in dealing with Post Polio Syndrome.
