As you all know I usually cook for two.

It took me some time to get cooking for two sorted out….

Even after several years of careful measuring followed by eating and realizing that the serving size was correct it still looks, well, rather pathetic when I actually put it into the serving bowl.

So this past week it was fun to cook for six.

Surprisingly, it was very little extra work.

Of course, I did have a lot of willing hands for chopping vegetables, washing greens and even making chard rolls.

This was one of the dishes I made….. I even managed to get a photo of it.

So – unlike most of my recipes, this serves 6.

Vegetable Couscous

Total time: 40 minutes

Ingredients:

Instructions:

Heat chicken broth.

Heat olive oil in a large skillet over medium heat.

Add onions and sauté 4 – 5 minutes.

Add peppers, garlic, zucchini and sauté until zucchini and peppers start to soften, 6 – 8 minutes longer.

Put couscous in a large bowl, When broth is boiling, pour over, cover and let stand for 10 minutes.

Add spices, salt, chickpeas to skillet and sauté 2 minutes longer.

Add tomatoes, cover, reduce heat and let simmer 5 minutes.

Uncover, remove from heat and stir in herbs.

When couscous is ready, uncover, add olive oil and fluff gently with a fork.

Spoon couscous onto a large platter

Top with vegetables and serve.

After five days of having extra people in our house, petting, playing and sneaking treats, the dogs had another busy day.

First a backhoe and dumptruck came down the lane to dig out our ditches. That gave them a few hours of entertainment.

Then the harvester and two tractors pulling wagons came to cut the wheat. That entertained them for a few more hours.

I thought they were going to wear holes in the tiles racing back and forth.

They slept very soundly last night.

As for me…. I have all the towels and bedding and whatever laundered. Each cycle takes about 90 minutes and our washing machines aren’t as big. Fortunately, it’s not exactly a tough job. My potager has been subdued and life is back to normal.

Kind of boring, actually, after all the fun….
