Tomato & Kielbasa & Cantaloupe Cold Salad

Great combo for the warm months. Filling and flavorful

Ингредиенты

  • 1 cup Kielbasa
  • one tablespoon sweet cream butter
  • salt and black pepper
  • One ripe tomato (sliced thick/wedges)
  • One scallion (cut on the bias)
  • 1/2 cup diced fresh cantaloupe
  • 1/2 lemon (juice only)
  • one tablespoon canola oil
  • Garnish with a sprig of rosemary

Инструкции

  1. Melt butter in a saute pan, cut Kielbasa in bite size pieces and cook 5-6 minutes. Remove from heat into a bowl to cool
  2. Once cooled add sliced tomato, scallion, cantaloupe, dressing and toss very gently
  3. I like to cover and chill 30 minutes before eating
  4. Garnish with rosemary sprig
