Royal Crown Cinnamon Chip Muffins

Preheat oven to 425 degrees F

Grease a muffin pan.

Whisk the eggs in a small bowl. Add the water and vanilla. Set aside.

In a medium bowl, mix the flour, oats, sugar, baking soda, baking powder, salt, dried buttermilk and cinnamon together.

Make a well in the dry ingredients and add the liquid ingredients.

Stir only until combined.

Add the cinnamon chips.

Drop the batter into the greased muffin cups. Fill ¾ full.

Mix the two tablespoons sugar and cinnamon together. Spoon the cinnamon sugar over the muffins.

Place the muffin pan in the oven.

Immediately turn the temperature down to 375 degrees.

Bake for 15 minutes or until done.

Cool the muffins on a wire rack.

I was curious.

I read that there is a way to get a crown on every muffin you make. With just a few simple tricks.

So I had to give it a try, right?

And it worked! I am sure by now you want to know the secret to the royal crown.

By the way, these muffins are chock full of cinnamon chips.

You won’t believe it, but I actually thought cinnamon chips were cinnamon flavored chocolate chips. Not chips of cinnamon.

Oh back to the secret to the crown. It’s just a few little things.

First, always preheat the oven to 400 or 425 degrees F. No matter what the recipe says. The batter will bake from the edges first forcing the batter to rise. Once the muffins are in the oven, reduce to 375 and be patient, don’t open the oven door until almost done (according to the recipe). Second, fill the tin 3/4 full not 2/3 full. And lastly, make sure you use baking soda. Baking soda is what makes the batter rise.
