  • 1 (8 1/2 ounce) pkg. chocolate wafer cookies, crushed
  • 1 stick butter, melted
  • 1/2 c. dark brown sugar
  • 3 large eggs
  • 3 (8 ounce) packages. cream cheese, softened
  • 1 c. lowfat sour cream
  • 3 T flour
  • 1 c. granulated sugar
  • 2 teaspoon vanilla
  • 1 teaspoon grated lemon rind
  • 2 T lemon juice, divided
  • 1 (12 ounce) can raspberry filling (for desserts and pastries)

  1. In small bowl, put together cookie crumbs, butter and brown sugar. Press into bottom and up sides of a 9 inch spring form pan; set aside.
  2. In blender or possibly food processor, put together large eggs, cream cheese, lemon rind and 1 tbsp lemon juice; set aside. Put together 1 tbsp lemon juice with raspberry filling and strain into a medium bowl. Fold in 1/3 of the cream cheese mix.Pour remaining batter into pan; drop raspberry batter in by spoonfuls and swirl with a knife. Bake at 325 degrees for 1 hour or possibly till center is set. Refrigerate several hrs before serving.
  3. Serves 8 to 16.
