,%20a%20picnic%20in%20Fairhaven%20and%20an%20impromptu%20visit%20with%20friends.%3C/p%3E%3Cp%3EWe%20were%20invited%20to%20attend%20a%20little%20'fest'%20put%20on%20by%20Music%20Together,%20a%20local%20class%20you%20can%20take%20with%20your%20small%20child%20in%20which%20you%20sing%20songs,%20bang%20on%20drums%20and%20dance...%20quite%20fun.%20Anyway,%20they%20had%20a%20little%20festival%20on%20Sunday%20with%20face%20painting,%20arts%20and%20crafts,%20music%20and%20drums,%20etc...%20our%20lovely%20friend%20Emily%20invited%20us%20to%20come%20with%20instructions%20to%20bring%20a%20picnic%20dinner.%20And%20when%20she%20says%20that%20here's%20what%20I%20think:%20Project!!%3C/p%3E%3Cp%3EI%20start%20thinking%20about%20all%20the%20fun%20blog%20posts%20I%20could%20put%20together%20with%20a%20picnic%20dinner%20because%20whatever%20it%20was,%20it%20was%20going%20to%20be%20in%20a%20box!%20Ok,%20tupperware...%20but%20that's%20a%20food%20box%20so%20it%20counts,%20yes?%20This%20dish%20is%20what%20I%20came%20up%20with%20and%20it%20was%20goooooood!!!%20mm%20mm%20good,%20to%20be%20precise.%20I%20truly%20hope%20you%20like%20it%20as%20much%20as%20I%20did;%20I%20love%20finding%20yet%20another%20meal%20that%20I%20want%20to%20eat%20all%20day%20long%20for%20the%20rest%20of%20my%20life!%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3EFor%20the%20marinade:%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3EOpen%20your%20tofu%20and%20slice%20into%20small%20cubes.%20Put%20tofu%20in%20a%20low%20container%20with%20a%20lid.%20Cover%20with%20marinade%20ingredients:%20aminos%20(or%20tamari),%20curry,%20salt%20and%20pepper.%20Cover%20the%20container,%20give%20it%20a%20good%20shake%20and%20let%20it%20sit.%20I%20let%20mine%20sit%20for%20a%20good%2030%20min..%20the%20longer%20the%20more%20flavorful%20but%20you%20can%20cook%20it%20right%20away%20if%20you%20like%20too.%3C/p%3E%3Cp%3ECook%20the%20quinoa%20in%20the%20water%20as%20per%20the%20package%20instructions.%3C/p%3E%3Cp%3EWhile%20quinoa%20is%20cooking,%20chop%20your%20apple,%20onion,%20carrot%20and%20parsley%20and%20put%20in%20a%20bowl.%3C/p%3E%3Cp%3EIn%20a%20lidded%20jar%20or%20other%20shakeable%20container,%20combine%20all%20dressing%20ingredients:%20agave,%20shallots,%20salt,%20lemon%20juice,%20olive%20oil%20and%20pepper.%20Put%20the%20lid%20on%20and%20shake%20the%20heck%20out%20of%20it.%3C/p%3E%3Cp%3EUsing%20a%20flat%20pan,%20heat%20it%20up%20and%20line%20your%20tofu%20cubes%20up%20in%20cute%20little%20rows.%20Cook%20on%20med/high%20heat%20for%20about%203%20minutes%20(until%20toasty%20brown)%20then%20flip%20and%20cook%20again%20on%20the%20opposite%20side.%20Note:%20if%20you're%20anal%20about%20'evenness',%20as%20I%20tend%20to%20be%20when%20it%20comes%20to%20cooking%20things%20that%20are%20cubed,%20you%20can%20continue%20the%20cooking%20process%20on%20all%20sides%20so%20each%20cube%20is%20toasty%20all%20around.%20This%20is%20what%20I%20did%20but%20it%20is%20a%20little%20more%20time%20consuming.%3C/p%3E%3Cp%3EWhen%20your%20quinoa%20is%20done,%20fluff%20and%20let%20cool%20down%20a%20bit%20then%20add%20it%20to%20the%20bowl%20of%20chopped%20veg.%20Mix%20slightly,%20to%20combine%20then%20give%20your%20salad%20one%20more%20shake%20and%20pour%20it%20on.%20Mix%20well.%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3EOk,%20so%20if%20you're%20just%20going%20to%20eat%20it,%20pile%20it%20in%20a%20neat%20stack%20on%20your%20plate%20and%20add%20the%20tofu%20to%20the%20top.%20We,%20however,%20having%20royal%20picnic%20plans,%20had%20to%20make%20it%20portable...%20in%20a%20box!%3C/p%3E%3Cp%3EAlso,%20this%20salad%20is%20great%20by%20itself%20OR%20with%20a%20lovely%20simple%20green%20salad.%20The%20one%20you%20see%20here%20is%20greens%20with%20parsley,%20carrot%20and%20mushroom...%20so%20good!%20The%20dressing%20is%20a%20simple%20balsamic,%20olive%20oil%20combination...%20more%20about%20that%20later%20:)%3C/p%3E%3Cp%3EI%20so%20so%20so%20hope%20you%20enjoy%20this%20as%20much%20as%20I%20did%20(and%20still%20am%20with%20leftovers!)%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
