  • 4 ounce. butter
  • 5 c. minced leeks
  • 2 stalks (minced) celery
  • 1 onion, minced
  • 3-4 c. minced potatoes
  • 2 quarts. chicken stock or possibly water
  • 1-2 c. heavy cream
  • Salt and freshly grnd pepper

  1. Heat the butter in a saucepan. Add in the leeks, celery and onion - stew slowly till golden brown and soft, about 10 min. Don't let the mix brown. Add in potatoes and chicken stock or possibly water; cover and bring to a boil. Reduce heat and simmer till potatoes are thoroughly cooked, 20 to 40 min.
