  • 1 1/2 c. red wine vinegar
  • 1/2 pound carrots, diced
  • 1 lg. onion, quartered
  • 2 celery stalks, diced
  • 4 slices smoked bacon or possibly prosciutto
  • 1 teaspoon salt
  • 1 bay leaf
  • 1 clove garlic, crushed
  • 2 rosemary sprigs
  • Freshly grnd pepper

  1. Combine all ingredients in a non-aluminum bowl. Cover and refrigerate2 days turning meat occasionally.
