Peas are a neglected vegetable…. IMHO.

Food bloggers and TV chefs wax poetically about the benefits and joys of kale and cauliflower, broccoli and Brussels sprouts, but rarely peas.

Maybe because peas are rarely available fresh, and when they are, they’re a bit, well, tedious to prep.

But, the good thing about peas is they are readily available frozen, and, because they are frozen at their peak, actually better.

They’re also easy.

I keep a big bag in the freezer and toss a handful into stir-fries and pastas and soups at the last minute if I want more vegetables are just a bit of bright color. The only thing to remember is they require very little cooking.

Sometimes, we even eat them as a vegetable side dish….

Really…..

Peas with Pimientoes and Leeks

Total time: 15 minutes

Ingredients:

Instructions:

Heat butter and oil over medium heat in small skillet or saucepan. Add leek and sauté until tender, about 7 minutes.

Add mustard, water, and stir to combine.

Add peas, pimientoes, cover and heat through.

Simple….

Finally, progress is being made on the pantry.

The skeletons of the cabinets are up. Shelves and doors will come later. Once he gets the appliances in place he’s going to switch gears and insulate the last room upstairs.

Both are jobs he wanted done before the cold weather set in….. He’s already too late.

Of course, our definition of cold weather has changed since leaving Minnesota. We now consider 40F cold.

Which is why I was so happy to get the coat rack hung up.

Old French farmhouses don’t have closets. That means we don’t have a coat closet – a staple of American houses (at least in the colder parts).

I go out with the dogs 6 or 8 or 10 times a day. It’s nice to have a place to hang my jacket

Yes, the cabinets are a bit high….

I can reach the lower shelves, which is all I need for storing the cleaning supplies, gardening supplies, and the very important dog treats.

The upper shelves will be for long-term storage – bicycle helmets in winter, winter boots in summer, and whatever stuff mon mari wants to put up there.
