  • 1 1/2 c. all-purpose flour
  • 1 T baking pwdr
  • 3/4 teaspoon salt
  • 1/2 c. walnuts, finely minced
  • 1/2 c. dry cranberries or possibly dry pitted cherries or possibly raisins
  • 3/4 c. old fashioned oats
  • 3 T butter, softened
  • 3/4 c. firmly packed light brown sugar
  • 3/4 c. lowfat milk
  • 1 egg

  1. Preheat oven to 350 degrees. Grease 16 muffin pan cups or possibly loaf pan (8 1/2 x 4 1/2 inch).2. Whisk together flour, baking pwdr and salt in large bowl. Toss nuts and cranberries with 1 tsp of flour mix in small bowl. Set aside. Stir oats into remaining flour mix.
  2. Beat together butter, sugar, lowfat milk and egg in a bowl till blended. Add in to flour mix, stirring just till evenly moistened. Mix in nut-cranberry mix. Put into greased muffin pan cups or possibly loaf pan.
  3. Bake in preheated oven for 20 min for 16 muffins or possibly 50 min for loaf, or possibly till wooden pick inserted comes out clean. Cool muffins on wire rack for 5 min. Loaf for 10 min.
