For this month's Blogging Marathon it is "Tea Time Snacks" and the recipe is Puttu. The recipe I am talking about is made during the "Navarathri Festival" in Tamil Nadu. Please do not confuse this with the most popular "kuzhal Puttu" made in Kerala. Though this is a traditional festive delicacy it can also be used as a snack during that time. Makes a lovely snack meal for kids and those with some sweet tooth. Stays good up to ten days; keep it loosely covered at room temperature and make sure it is in a dry place and do not use wet spoons while serving. Being a festive day (Vijay Dasami) I start with this post.

Navarathri Puttu | Rice Flour Puttu

A traditional sweet made during Navrathri. A mixture of rice flour and jaggery syrup.

Prep Time: 1.5 Hr | Cook Time: 45 Mins | Total Time: ~2.5 Hrs | Serves: 3

Ingredients

A pinch of Cardamom powder.

Instructions

Prep of Rice Flour

Soak 2 cups of raw rice in water for an hour. Drain the water. Spread the wet rice on a cloth and let it dry for some time. Do not dry it completely. The rice should be moist. Then grind it in a mixer. (1)

Prep of Puttu

Roast the ground flour in a pan. Mix a pinch of salt and turmeric powder in hot water.

Sprinkle this water in the flour and mix it well. For the consistency of the flour refer notes. (2) Then sieve the flour to avoid forming lumps.

Steam cook this flour in a pressure cooker and break them into small pieces.

Add jaggery in a pan and melt it. Add little water if required. Once it melts, filter it using a strainer to filter out the dirt's present in the jaggery.

Again pour this in the pan and keep stirring it till it reaches a soft jelly consistency. (3)

Turn off the stove and pour this on the flour. Mix it well without forming any lumps.

Heat ghee and roast the cashews and add this to the mixture. You can also add some cardamom powder for flavour.

Notes

Note that 1 cup of raw rice when ground gives approximately 2 cups of rice flour. This flour can be used to make many other south Indian snacks.

Sprinkle enough water so when you try to make a ball, it should hold and when you break it, it should fall like a sand. If the description is too confusing, just add water enough to gather it to a mass.

To test the consistency of the jaggery syrup; when you drop a little in a bowl of water, you should be able to roll it out into a ball and when you press, it should be like a jelly.
