I’m not sure why I only make homemade vinaigrette when I’m preparing a salad for guests. It makes no sense. It really is silly to deprive myself and use store bought varieties during the week instead of taking 2 minutes to make my own. The fresh stuff both tastes fresher and cuts down on the amount of preservatives.

Maybe I’ll start changing my ways. I’m at least on the right path since I made this Mighty Lemon-Pepper Salad for a weeknight dinner. There were no guests, just my wife, kids and myself. Yes making the vinaigrette took me longer than just popping open a store bought variety from the fridge but its fresh flavor reminded me of why homemade is often best!

I added yellow bell peppers to this salad and love how they add extra crunch! They also lend themselves well to the bright lemony flavor of the vinaigrette. As you can see from the recipe below this healthy salad comes together quickly!

Hip Cooking Tip: Making this vinaigrette with the juice from those plastic lemons you buy at the grocery store isn’t going to deliver that fresh taste I’m talking about. Go with a real lemon instead!

Song Pairing Suggestion: There was once a little known band back in the '80s called The Mighty Lemon Drops. Hopefully you are lucky enough to have a copy of "World Without End". I still have a copy on cassette and have been listening to it over and over again ever since I rediscovered it in my music collection. If I had to pick one song to listen to while cooking it would be "Crystal Clear".

Mighty Lemon-Pepper Salad

Romaine lettuce, yellow bell peppers and sliced red onions tossed with a bright lemon vinaigrette

Lyrics

In a small bowl whisk together lemon zest, lemon juice, olive oil, honey, mustard and black pepper. Season with salt. Set aside.

In a large salad bowl, toss together lettuce, onions and bell peppers. Toss with vinaigrette before serving.
