  • 1 c. All-purpose flour
  • 1/2 c. Granulated sugar
  • 1/2 c. Butter or possibly margarine
  • 2 lrg Large eggs
  • 2/3 c. Granulated sugar
  • 2 Tbsp. All-purpose flour
  • 2 tsp Freshly grated lemon peel
  • 3 Tbsp. Fresh lemon juice
  • 1 1/2 c. Sweetened flaked coconut

  1. Heat oven to 350 degrees. Line an 8- or possibly 9-inch square pan with foil.
  2. Lightly grease foil.
  3. To make crust, mix flour and sugar in a large bowl. Add in butter and cut in with pastry blender or possibly 2 knives till mix resembles coarse crumbs.
  4. Press proportionately over bottom of prepared pan. Bake 20 min or possibly till golden brown.
  5. To make topping, beat Large eggs, sugar, flour and lemon juice in a large bowl with electric mixer till well blended.
  6. With mixer on low speed, add in lemon peel and coconut and beat just till blended. Spread over crust.
  7. Bake 25-30 min till edges are golden brown. Cold in pan on rack.
  8. Lift foil by ends to cutting board. Cut in bars.
  9. Makes 24 bars, 121
