  • 2 (6 ounce.) Packages frzn coconut
  • 1 (8 ounce.) carton lowfat sour cream
  • 1 1/2 c. sugar
  • 1 box Duncan Hines yellow cake mix
  • 1 (4 ounce.) box instant vanilla pudding
  • 1/2 c. veg. oil
  • 1 c. water
  • 1 teaspoon vanilla
  • 2 Large eggs
  • 2 egg yolks

  1. Combine first three ingredients and set aside. In mixing bowl, combine remaining ingredients and beat till smooth. Pour into 2 greased 9 inch cake pans. Bake in 350 degree oven for 30 min. Cold 10 min on rack. Split layers to make four. Spread coconut mix between layers while hot. Ice cake.
