Grilled Zucchini and Chard Pesto Roll Ups

This is a story about a girl who was a picky eater growing up. If it didn’t have chocolate on it, she didn’t want to try it. Anything green just wasn’t going to hit her plate. She loved to eat cookie dough, and BBQ chips. No, not together. But they were two of her favorite things to eat. The worst part was she ate like a bird. Here mom, just couldn’t get her to eat much of anything. There was no way Grilled Zucchini and Chard Pesto would get anywhere near her lips.

Grilled Zucchini and Chard Pesto Roll Ups

Each zucchini should make about 8 or 9 slices using your slicer. So make as many as you need.

Serves: 12 ounces

Ingredients

Directions

Combine chard leafs, garlic,grated cheese and sunflower seeds in a food processor; pulse until well-blended.

Gradually pour in olive oil chicken broth mixture pulse again.

The pesto should be very thick.

Adjust seasoning with salt and black pepper, as desired.

Thinly slice zucchini lengthwise; brush lightly with olive oil, and sprinkle slightly with salt and black pepper.

Grill until marked on both sides and tender (about 1 minute per side); remove and cool.

Spread about 1 teaspoon of pesto on 1 side of each grilled zucchini slice; roll up and secure with a toothpick if needed

She is me. Thank you everyone for making me want to try food that I never would have even considered in the past. Blogging about food started out as a means to keep me in line with my weight. But it has become more than that now.

It’s now a passion of mine to try new dishes. A new assortment of fruits and veggies and International cuisine that I would not have considered just 5 years ago.

I still love to eat cookie dough but I don’t make it a habit. (Unfortunately)

These grilled zucchini make excellent appetizers at any party. They are cute enough to get your kids to eat them too. Unless you have one like I was when I was a little girl.

There is hope for them, Don’t give up on them. We all realize at some point the goodness in greens and the treat in sweets.
