Just in time for Super Bowl, we finally upgraded our television to be a Flat-Screen HDTV.
Good times. At the same time, I allowed our local cable company to talk me into their new DVR with all kinds of promised new features. What they didn't tell me (and I didn't think about it) is that my old DVR box had precious saved recorded TV shows.
I realized this when the cable guy was long gone, and I couldn't find my recorded shows. I'll skip past the melodramatics that ensued...the frantics calls to get my cable box back. Not gonna happen.
That meant, I had to set up all of my shows, that I don't want to miss, all over again. (Downton Abbey, come back soon, please.)

%20is%20that%20my%20old%20DVR%20box%20had%20precious%20saved%20recorded%20TV%20shows.%3C/p%3E%3Cp%3EI%20realized%20this%20when%20the%20cable%20guy%20was%20long%20gone,%20and%20I%20couldn't%20find%20my%20recorded%20shows.%20%20I'll%20skip%20past%20the%20melodramatics%20that%20ensued...the%20frantics%20calls%20to%20get%20my%20cable%20box%20back.%20%20Not%20gonna%20happen.%3C/p%3E%3Cp%3EThat%20meant,%20I%20had%20to%20set%20up%20all%20of%20my%20shows,%20that%20I%20don't%20want%20to%20miss,%20all%20over%20again.%20%20(Downton%20Abbey,%20come%20back%20soon,%20please.)%3C/p%3E%3Cp%3EI%20found%20the%20America's%20Test%20Kitchen%20show%20in%20HD,%20and%20I%20set%20up%20to%20record%20the%20series.%20%20I%20gotta%20tell%20you--%20I%20can%20fully%20appreciate%20how%20much%20better%20food%20looks%20in%20High-Def.%20%20This%20could%20be%20dangerous.%20%20Had%20I%20seen%20this%20recipe%20in%20a%20cookbook,%20I%20might%20have%20flipped%20right%20past%20the%20pages.%3C/p%3E%3Cp%3ERather,%20as%20I%20watched%20how%20easy%20it%20was%20to%20butterfly%20a%20pork%20loin,%20then%20rub%20it%20with%20sugar%20and%20thinly%20sliced%20garlic%20that%20is%20cooked%20in%20butter--%20I%20was%20not%20hitting%20the%20DVR%20fast%20forward.%20I%20was%20hooked.%3C/p%3E%3Cp%3EI'm%20committed%20to%20emptying%20out%20my%20hoard%20of%20frozen%20food%20in%20our%20upright%20freezer.%20%20(Am%20I%20waiting%20for%20the%20Apocalypse?)%20%20Why%20do%20I%20store%20so%20much?%20%20As%20luck%20would%20have%20it,%20I%20remembered%20that%20I%20had%20%20pork%20loin%20roast%20waiting%20to%20thawed.%20Perfect!%3C/p%3E%3Cp%3EIt's%20been%20a%20while%20since%20I've%20made%20a%20Butterflied%20Pork%20loin,%20stuffed%20with%20Fig%20Jam,%20Spinach%20and%20Feta.%20%20This%20time,%20I%20found%20that%20the%20instructions%20made%20butterflying%20very%20easy%20to%20do,%20myself!%20(Patting%20self%20on%20back.)%20%20The%20golden%20brown,%20buttery,%20garlic%20slices%20are%20spread%20inside%20the%20pork%20loin.%20Yum.%3C/p%3E%3Cp%3ETying%20the%20roast%20was%20easy,%20and%20I%20loved%20the%20tip%20of%20looping%20the%20string%20twice,%20before%20pulling.%20It's%20much%20easier%20to%20do,%20this%20way%20(though%20photographing%20and%20holding%20string%20with%20one%20hand%20is%20a%20challenge).%20I%20must%20be%20easily%20amused,%20because%20I%20found%20this%20whole%20process%20to%20be%20fun--%20butterfly,%20pound,%20fill,%20fold,%20tie.%20It%20didn't%20feel%20like%20%22work%22.%3C/p%3E%3Cp%3ETo%20season%20the%20pork,%20you%20want%20to%20use%20Herbes%20de%20Provence.%20%20These%20herbs%20can%20include%20savory,%20fennel,%20basil,%20thyme%20and%20lavender.%20You%20can%20make%20your%20own,%20but%20I%20can%20easily%20find%20this%20at%20grocery%20stores.%20I%20use%20this%20to%20season%20roasted%20potatoes,%20pork,%20chicken%20and%20vegetables.%20Delicious!%3C/p%3E%3Cp%3EHello,%20lovely%20pork%20roast!%3C/p%3E%3Cp%3ETo%20build%20flavor,%20the%20roast%20is%20seared%20on%20all%20three%20sidesk.%20Three?%20Why,%20yes.%20There%20is%20no%20reason%20to%20sear%20the%20bottom%20of%20the%20roast,%20because%20it's%20going%20to%20roast%20quite%20nicely%20in%20the%20oven.%20This%20is%20about%205%20to%208%20minutes%20total%20work.%20%20The%20roast%20is%20removed,%20and%20it's%20time%20to%20build%20a%20delicious%20au%20jus.%3C/p%3E%3Cp%3EApples,%20onion%20and%20garlic.%20I'm%20in!%20To%20build%20more%20flavor,%20we%20add%20white%20wine%20(I%20used%20Sauvignon%20Blanc),%20bay%20leaves%20and%20fresh%20thyme.%20So%20very%20%22French%22.%3C/p%3E%3Cp%3EThe%20roast%20is%20snuggled%20into%20the%20apples%20and%20onion...%3C/p%3E%3Cp%3E...%20then%20covered%20with%20foil%20and%20covered%20with%20a%20tight%20fitting%20lid.%20%20It's%20then%20slow-roasted%20at%20225F%20for%20about%2050-90%20minutes,%20until%20the%20internal%20temperature%20reaches%20140F.%20%20(My%20roast%20took%20about%2050%20minutes,%20because%20it%20was%20just%20under%202%20pounds.%3C/p%3E%3Cp%3EThe%20aroma%20of%20wine,%20onion,%20garlic%20and%20apples...%20mouth-watering.%3C/p%3E%3Cp%3EChicken%20stock%20is%20added%20to%20the%20pan%20sauce%20to%20equal%201-1/4%20cups.%20I%20actually%20had%20plenty%20of%20sauce.%3C/p%3E%3Cp%3EThe%20pork%20is%20super%20moist%20and%20juicy.%20The%20technique%20of%20roasting%20the%20pork%20in%20a%20very%20low-heat%20oven%20was%20successful.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20This%20dish%20is%20perfect%20to%20serve%20to%20company.%20One%20adjustment%20I%20will%20make,%20next%20time,%20is%20to%20increase%20the%20amount%20of%20garlic%20that%20is%20rolled%20into%20the%20roast.%20%20I%20would%20have%20liked%20more%20garlic%20flavor--%20but%20that's%20my%20own%20preference.%20%20The%20sauce%20was%20very%20flavorful%20and%20not%20too%20rich.%20%20Once%20again,%20America's%20Test%20Kitchen/Cook's%20Illustrated%20has%20developed%20a%20recipe%20that%20looks%20fancy,%20but%20isn't%20too%20hard%20to%20make.%20The%20instructions%20were%20very%20clear.%20%20If%20I%20had%20red%20cabbage%20on%20hand,%20I%20would%20have%20enjoy
