- In a large bowl mix together
- 1 stick of softened unsalted butter
- 4 and 1/2 Tbs of powdered sugar
- Beat them together with an electric mixer on low (mustn't over mix)
- Then add in:
- 1/4 cup of roughly ground unsalted pistachios
- 1 cup of plain flour
- 1/2 tsp of baking powder
- 1 Tbs rosewater
- Mix them in by hand (mustn't over-mix.)

%20And%20always%20have%20a%20back-up%20plan.%20Yes,%20the%20road%20to%20hell%20truly%20is%20paved%20with%20good%20intentions...it's%20also%20paved%20with%20desserts%20as%20I%20recently%20discovered.%3C/p%3E%3Cp%3ESo,%20as%20I%20was%20pouring%20my%20wretched,%20rancid,%20grainy-tasting%20pineapple%20pudding%20into%20the%20garbage,%20I%20realized%20I%20had%20company%20coming%20in%20a%20few%20hours,%207%20or%208%20dishes%20as%20part%20of%20my%20Indian%20dinner,%20and%20no%20dessert.%20I%20needed%20a%20back%20up%20plan.%20Fast.%3C/p%3E%3Cp%3EI%20learned%20long%20ago%20when%20in%20doubt...make%20ice%20cream.%20The%20Cuisinart%20ice%20cream%20maker%20I%20bought%20a%20few%20years%20ago%20has%20been%20worth%20it's%20weight%20in%20gold%20or%20at%20least%20gelato,%20and%20whenever%20I'm%20in%20a%20pinch%20I%20grab%20it.%20I%20decided%20to%20make%20a%20rose%20water%20ice%20cream,%20but%20somehow%20it%20seemed%20like%20it%20wasn't%20going%20to%20be%20enough.%3C/p%3E%3Cp%3EI%20turned%20to%20Lord%20Google%20and%20grabbed%20a%20cookie%20wave.%20It%20washed%20me%20ashore%20at%20the%20UK%20paper%20%22The%20Telegraph%22%20and%20their%20food%20writer%20Diana%20Henry.%20In%20among%20stories%20about%20who%20catered%20the%20Queen's%20Garden%20Party,%20(no,%20not%20Guy%20Fieri.%20Greggs)%20and%20a%20restaurant%20giving%20back%20a%20Michelin%20star%20to%20attract%20local%20diners%20who%20wanted%20lower%20prices...%20sort%20of%20like%20Lady%20Gaga%20taking%20the%20veil.%20Oh%20wait,%20she%20already%20has,%20multiple%20times...%3C/p%3E%3Cp%3EIn%20the%20middle%20of%20a%20this%20I%20found%20a%20recipe%20for%20rose%20pistachio%20biscuits,%20(cookies%20in%20Ammerricun)%20I%20was%20in!%3C/p%3E%3Cp%3ERosewater%20Pistachio%20Cookies%3C/p%3E%3Cp%3EHere's%20what%20to%20do:%3C/p%3E%3Cp%3EThe%20recipe%20warns%20this%20may%20be%20a%20little%20difficult,%20but%20I%20felt%20that%20the%20dough%20came%20together%20pretty%20easily.%3C/p%3E%3Cp%3ERoll%20it%20into%20a%20ball,%20wrap%20it%20in%20a%20bit%20of%20saran%20wrap%20(clingfilm%20if%20you're%20classy)%20stick%20it%20in%20the%20fridge%20for%20about%2020%20minutes%20so%20that%20it%20firms%20up,%20(If%20only%20life%20were%20as%20easy%20as%20cookies)%20and%20the%20dough%20is%20made.%3C/p%3E%3Cp%3EWhile%20that%20is%20going%20on....%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325%20degrees.%3C/p%3E%3Cp%3ELine%20a%20cookie%20sheet%20with%20parchment%20paper.%3C/p%3E%3Cp%3EAfter%20the%20dough%20has%20firmed%20a%20bit,%20break%20it%20into%20walnut%20sized%20pieces%20and%20flatten%20them%20into%20rounds.%3C/p%3E%3Cp%3EBake%20the%20cookies%20for%2015%20minutes%20or%20a%20little%20more.%20They're%20done%20when%20they%20start%20to%20turn%20a%20bit%20golden.%20They%20should%20still%20be%20a%20bit%20soft,%20they%20harden%20as%20they%20cool.%3C/p%3E%3Cp%3EWhile%20the%20cookies%20are%20cooling,%20sprinkle%20them%20with%20a%20bit%20more%20rosewater.%3C/p%3E%3Cp%3EWhen%20they're%20a%20bit%20cooler,%20slide%20the%20cookies%20off%20the%20sheet%20and%20onto%20%20a%20cooling%20rack.%3C/p%3E%3Cp%3ESift%20the%20cookies%20with%20a%20bit%20of%20powdered%20sugar.%3C/p%3E%3Cp%3EBefore%20serving%20the%20cookies,%20sprinkle%20each%20with%20a%20tiny%20bit%20of%20ground%20pistachios%20and%20ground%20cardamom.%3C/p%3E%3Cp%3EServe%20them%20up.%3C/p%3E%3Cp%3EOur%20friend%20Heikki%20enjoyed%20them.%3C/p%3E%3Cp%3EAnd%20that's%20even%20before%20he%20got%20his%20tea...%3C/p%3E%3Cp%3EAnd%20his%20ice%20cream.%3C/p%3E%3Cp%3ESo%20did%20the%20fall-back%20cookies%20do%20the%20trick?%20You%20bet.%20They%20were%20a%20perfect%20match%20for%20the%20ice%20cream%20and%20the%20perfect%20finish%20for%20a%20spicy,%20South%20Indian%20dinner.%20I%20can't%20wait%20to%20make%20them%20again.%20Sometimes%20the%20road%20to%20good%20intentions%20is%20paved%20with%20cookies.%20Coming%20up%20next,%20an%20unexpected%20treat%20that%20may%20push%20potato%20chips%20off%20the%20table.%20Yes,%20really.%20Follow%20along%20on%20Twitter%20@kathygori%3C/p%3E){kind=link}
