Instructions

Soak the rice in water for about half an hour.

Warm 2 Tbsp milk and add saffron strands. Keep aside until it changes colour.

Heat butter in a pan. Add the bay leaves, cloves, cinnamon stick and cardamom. Give a quick stir.

Then add the onions and saute until it becomes translucent.

Then add water and milk. Bring it to a boil. Drain the water from the Basmati rice and add it to the pan. Also add the saffron mixed milk to this.

Stir it well so that the rice does not stick to the bottom. Cover and cook until done.

Meanwhile fry the dry fruits in ghee until it becomes golden brown. Keep aside.

Once the rice is cooked, separate the grains. Add the rose essence and the dry fruits. Garnish with coriander leaves. Mix them well and keep it covered until you serve.
