I just threw this together one night--and surprise, surprise--my wife actually enjoyed it...so I thought I better jot it down so I could make it again

Ингредиенты

  • 1# deli roast beef (bottom round) cut on slice #8
  • 1 small red onion, sliced and halved
  • 2-3 stalks of celery, sliced
  • 1/2 # carrots, sliced bite-size
  • 3/4 # macaroni, cooked
  • 1 can diced tomatoes, flavored if you prefer
  • 1 small can tomato sauce
  • 2 cups mozzarella/cheddar cheese mix, shredded
  • 1 can beef broth
  • olive oil
  • salt, pepper and other spices to taste

Инструкции

  1. Boil sliced carrots in beef broth (if you prefer softer carrots)
  2. Dice roast beef into bite size pieces
  3. In large skillet coated with olive oil, sauté celery, onions, roast beef and cooked carrots (reserve beef broth)
  4. Cook macaroni to desired doneness while sauté is in works
  5. Add cooked macaroni and sautéed items to baking dish and mix well
  6. Mix in both tomato items
  7. Mix in cheese and moisten with some of the beef broth if you think it is necessary
  8. Cover with plastic wrap (to maintain moistness) and aluminum foil
  9. Bake at 350 for 45-50 minutes
