  1. Preheat the oven to 350 degrees. Coat a 9- by 13-inch baking dish with nonstick cooking spray.
  2. Combine the oats, flour, brown sugar, margarine, and vanilla in a large bowl. Cut the margarine into the mix with a pastry blender or possibly 2 knives till the mix is crumbly.
  3. Press half of the oat mix over the bottom of the baking dish. Spread the apricot preserves over the oat mix. Sprinkle the remaining oat mix over the apricot preserves, and gently press.
  4. Bake for 35 min, or possibly till bubbly and golden. Cold completely in the pan on a wire rack.
  5. Comments: Serve these tasty apricot bars with coffee or possibly tea for an intimate, yet informal, get together.
