%3C/p%3E%3Cp%3EFor%20your%20viewing%20pleasure,%20we'll%20start%20with%20a%20snapshot%20of%20the%20cookie%20plate%20I%20made%20for%20dear%20Mr.%20ValleyWriter%20and%20his%20office%20mates:%3C/p%3E%3Cp%3EStarting%20at%20the%20top%20left,%20we%20have%20my%20tried-and-true,%20classic%20sugar%20cookies.%20Some%20are%20decorated%20with%20simple%20colored%20sugar%20and%20others%20have%20my%20sugar%20cookie%20icing,%20which%20dries%20shiny%20and%20beautiful.%3C/p%3E%3Cp%3ETo%20the%20right%20of%20those%20are%20white%20chocolate%20chip%20Craisin%C2%AE%20cookies,%20which%20I%20think%20are%20a%20nice%20change%20of%20pace%20from%20a%20traditional%20chocolate%20chip%20cookie.%20The%20dried%20cranberries%20just%20add%20a%20special%20little%20touch%20for%20me.%20I%20don't%20know%20what%20it%20is,%20but%20they%20really%20say%20%22Christmas%20cookie%22%20to%20me.%3C/p%3E%3Cp%3EUnderneath%20those,%20we%20have%20my%20take%20on%20a%20Linzer%20cookie.%20Linzer%20cookies%20normally%20have%20ground%20almonds%20added%20to%20the%20dough,%20but%20we're%20not%20big%20on%20nuts%20in%20sweets%20around%20the%20ValleyWriter%20household,%20so%20I%20just%20made%20them%20using%20sugar%20cookie%20dough.%20I%20cut%20out%20a%20bunch%20of%20big%20stars,%20then%20cut%20smaller%20stars%20out%20of%20the%20middle%20of%20half%20of%20them.%20I%20spread%20a%20little%20triple%20berry%20jam%20on%20the%20full%20stars,%20baked%20both%20pieces%20for%205%20minutes.%20While%20still%20hot,%20I%20sprinkled%20the%20stars%20with%20cut-outs%20with%20confectioner's%20sugar,%20then%20put%20them%20on%20top%20of%20the%20jam-filled%20pieces.%20(The%20hot%20jam%20acts%20like%20a%20glue.)%20Ta%20da!%20Faux%20Linzer%20cookies!%3C/p%3E%3Cp%3ENext%20on%20the%20bottom%20left,%20we%20have%20gingersnaps.%20These%20are%20based%20on%20the%20same%20recipe%20I%20used%20to%20make%20the%20soft%20and%20chewy%20ginger%20cookies%20last%20year,%20except%20I%20used%20all%20butter%20(no%20shortening)%20for%20these,%20which%20creates%20a%20crispy%20cookie%20that%20%22snaps%22%20when%20you%20bite%20into%20it.%20These%20are%20nice%20and%20spicy,%20just%20like%20a%20gingersnap%20should%20be.%20But%20just%20as%20a%20personal%20preference,%20next%20year%20I%20think%20I'll%20go%20back%20to%20the%20chewy%20ones.%20I%20feel%20like%20I%20can%20get%20a%20gingersnap%20anywhere,%20but%20the%20chewy%20ones%20are%20kind%20of%20special.%20(If%20anyone%20knows%20how%20to%20make%20chewy%20cookies%20without%20using%20shortening%20-%20let%20me%20know!).%3C/p%3E%3Cp%3EAnd%20last,%20but%20certainly%20not%20least,%20my%20new%20addition%20to%20the%20roundup%20in%20the%20center%20of%20the%20tray%20-%20homemade%20truffles!%3C/p%3E%3Cp%3EThese%20are%20really%20simple%20to%20make,%20though%20they%20are%20time%20consuming.%20Here's%20the%20recipe%20I%20came%20up%20with%20after%20some%20trial%20and%20error:%3C/p%3E%3Cp%3EDark%20Chocolate%20Truffles%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ECut%20chocolate%20into%20chunks.%20Add%20to%20the%20top%20pot%20of%20a%20double%20boiler.%20Heat%20over%20medium%20heat,%20stirring%20frequently%20until%20melted.%20Turn%20the%20burner%20off%20and%20add%20cream%20cheese%20to%20the%20chocolate%20mixture.%20Whisk%20in%20briskly.%20Then%20stir%20in%20marshmallow%20cream%20until%20well%20mixed%20and%20smooth.%20Stir%20in%20liqueur%20last%20(if%20desired).%3C/p%3E%3Cp%3ESpread%20this%20mixture%20(ganache)%20in%20a%20shallow%20pan%20(I%20used%20a%209%20x%2013%20casserole%20dish)%20and%20refrigerate%201%20hour%20to%20help%20harden.%3C/p%3E%3Cp%3ERemove%20from%20refrigerator%20and%20scoop%20out%20about%20a%20teaspoon%20at%20a%20time%20(depending%20on%20how%20big%20you%20want%20your%20truffles),%20rolling%20the%20ganache%20into%20balls%20between%20your%20palms.%3C/p%3E%3Cp%3EAt%20this%20point,%20you%20can%20either%20roll%20the%20truffles%20in%20cocoa,%20powdered%20sugar%20or%20nuts,%20or%20save%20them%20for%20later%20to%20cover%20in%20chocolate.%20If%20you%20are%20using%20the%20cocoa,%20sugar%20or%20nuts%20-%20roll%20them%20right%20away%20while%20the%20ganache%20is%20still%20a%20little%20soft%20from%20the%20heat%20of%20your%20hands.%20This%20will%20help%20the%20topping%20stick.%3C/p%3E%3Cp%3EOnce%20rolled,%20you%20can%20pop%20the%20truffles%20back%20into%20the%20fridge%20for%20a%20few%20days%20or%20even%20a%20week%20before%20you%20finish%20decorating/eating%20them.%3C/p%3E%3Cp%3EFor%20the%20truffles%20that%20I%20wanted%20to%20coat%20in%20chocolate,%20I%20put%20them%20back%20in%20the%20refrigerator%20for%20another%20night%20and%20let%20them%20sit%20at%20room%20temperature%20for%20about%202%20hours%20before%20I%20was%20ready%20to%20coat%20them.%3C/p%3E%3Cp%3EThen%20I%20melted%20the%20white%20chocolate%20in%20the%20microwave,%20per%20the%20package%20instructions.%3C/p%3E%3Cp%3EOne%20by%20one,%20I%20put%20the%20truffles%20on%20a%20spoon,%20dunked%20it%20into%20the%20bowl%20of%20chocolate%20and%20a%20carefully%20tipped%20them%20off%20the%20spoon%20onto%20waxed%20paper.%3C/p%3E%3Cp%3EI%20swirled%20the%20spoon%20up%20and%20over%20the%20top,%20which%20gave%20the%20truffles%20a%20cool%20little%20curly%20cue%20on%20the%20top.%3C/p%3E%3Cp%3EOn%20the%20ones%20that%20didn't%20turn%20out%20so%20cute%20on%20top,%20I%20used%20the%20colored%20candy%20melts%20to%20make%20designs%20or%20squiggles%20on%20top.%20My%20creative%20outlet%20;-)%3C/p%3E%3Cp%3ENext%20year,%20I'll%20have%20to%20change%20up%20the%20cookies%20some,%20just%20for%20variety.%20But%20you%20can%20bet%20the%20sugar%20cookies%20will%20make%20a%20comeback.%20Because%20really,%20have%20you%20celebrated%20the%20holidays%20yet%20if%20you%20haven't%20had%20a%20sugar%20cookie?%20No.%20So%20go%20eat%20one!%3C/p%3E){kind=link}
