Candied Pecans

I think I’ve mentioned my love of pecans before and the Holidays are a perfect time to bake/cook with them by the bags full! I love any recipe that features a good pecan and just a few ingredients. The second time I made these, I added a pinch of cayenne pepper, just for kicks. And I’ll tell you what, I won’t make them without it ever again…

Candied Pecans

Spray a baking sheet with non-stick cooking spray and set it to the side. In a medium saucepan, bring the sugar and the water to a boil, stirring until the sugar is dissolved. Continue cooking until the mixture is light amber in color--about 20-25 minutes. Remove from the heat, add in the pecans, the salt and cayenne pepper. Stir quickly then spread out on the greased baking sheet. After it hardens, break into pieces, store in an airtight container.
