  • 2 pkt ramen noodle soup mix - (3 ounce ea)
  • 1/2 c. sunflower seeds
  • 3 Tbsp. slivered almonds minced
  • 1/2 c. sugar
  • 1/4 c. extra virgin olive oil
  • 1/4 c. cider vinegar
  • 2 Tbsp. soy sauce
  • 1 x bok choy shredded
  • 6 x green onions minced

  1. Remove flavor packets from soup mix; reserve for another use. Crumble noodles. Combine noodles, sunflower seeds, and almonds. Spread on a 15- by 10-inch jellyroll pan. Bake at 350 degrees for 8 to 10 min or possibly till golden; set aside.
  2. Bring sugar and next 3 ingredients to a boil in a saucepan over medium heat. Remove from heat; cold.
  3. Place bok choy and green onions in a large bowl. Drizzle with sugar mix. Add in ramen noodle mix, tossing well. Serve immediately.
  4. This recipe yields 6 to 8 servings.
