  • 6 tablespoons butter
  • 6 tablespoons flour
  • 1 teaspoon salt
  • 1/4 teaspoon ground black or white pepper
  • 2 1/2 cups milk
  • 2 cup grated Mozzarella or an Italian Cheese
  • 1/2 Teaspoon of Basil
  • 1/2 Teaspoon of Rosemary
  • 1/2 Teaspoon of Oregano
  • Cajun's Choice Blackened Seasoning (or McCormick's Grill Mates Chicken Rub)
  • Boneless Chicken Breast
  • Oil (enough to just cover the bottom of a frying pan)
  • Italian Sausage

  1. Cheese Sauce Preperation :Melt butter; remove from heat. Mix flour and seasonings in separate container. Once butter is melted, mix in Flour and Seasonings in and stir till pasty. Gradually add milk, stirring until well mixed. Cook over low heat, stirring constantly, until thickened and smooth. Add cheese. Stir until smooth and well blended.Makes 2 cups.
  2. Chicken Preparation: Using a frying pan pour enough oil into frying pan to cover the bottom approximately 1 cm thick. Heat oil on Med until hot (sprinkle a small amount of water in pan, when oil pops, it is to temp). Place chicken breasts in pan, and sprinkle seasoning on top until lightly covered. Cook for approximately 4 minutes, then flip chicken and again sprinkle with seasoning. Cook for approximately 2 minutes longer.
  3. Sausage and Cheese Sauce.
  4. Italian Sausage Preparation: Boil Italian Sausage for approximately 5-7 minutes or until no red.
