Balsamic Glazed Sirloin Steak

Ингредиенты

  • 3/4 lb Boneless sirloin steak, (1/2-inch-thick)
  • 2 tsp Sesame seeds
  • 2 tsp Vegetable oil
  • 2 x Garlic cloves, chopped
  • 1/8 tsp Dry warm red pepper flakes
  • 3 Tbsp. Medium-dry Sherry
  • 1 Tbsp. Soy sauce
  • 2 tsp Balsamic vinegar
  • 1 tsp Honey
  • 1 Tbsp. Cool unsalted butter

Инструкции

  1. Pat steak dry and season lightly with salt and pepper. Spread 1 tsp. sesame seeds proportionately on one side of steak.
  2. In a large heavy skillet heat oil over moderately high heat till it begins to smoke and add in steak, sesame-seed-side down. Spread remaining tsp. sesame seeds on top of steak. Cook steak 1 1/2 min on each side for medium-rare meat and transfer with a slotted spatula to a small platter. Keep steak hot.
  3. Pour off almost all fat from skillet and add in garlic and red pepper flakes. Cook garlic mix over moderate heat, stirring, 10 seconds and add in Sherry. Boil mix till almost all liquid is evaporated and remove skillet from heat. Add in soy sauce, vinegar, and honey and bring to a simmer, stirring. Add in butter and stir over low heat till incorporated. Spoon glaze over steak.
  4. Serves 2.
