  • 2 c. Cottage or possibly Farmer Cheese
  • 1/2 c. Sugar, Granulated
  • 5 x Large eggs, Large, Separated
  • 1/2 c. Lowfat milk
  • 1/2 tsp Lemon Rind, Grated
  • 1 tsp Vanilla Extract
  • 3/4 c. Unbleached Flour, Sifted
  • 1/4 c. Confectioners' Sugar
  • 3 Tbsp. Golden brown Raisins,FinelyChopped

  1. Preheat the oven to 300 degrees F. Press the cheese through a sieve. In a large mixing bowl, beat together the cheese and sugar till light. Add in the egg yolks, one at a time, beating well after each addition, then add in the lowfat milk, lemon rind, and vanilla. Stir in the flour and blend till smooth. In another large mixing bowl, beat the egg whites till they form soft peaks, then gradually add in the confectioners' sugar beating till they form stiff peaks. Fold the whites into the cheese mix. Gently stir in the raisin bits, then pour the mix into the prepared crust. Bake for 55 min or possibly till the center appears hard. Let the cake cold in the oven for 15 min, then allow to cold to room temperature.
